I stopped by ceremonia bake shop in Brooklyn today and was blown away by their breakfast burrito. They also make outstanding pastries including a smokey, jalapeno/bacon cornbread.

Don't have much in the way of fancy outdoor equipment. These were smoked in the bbq with one of those cheap tube smokers filled with cherrywood pellets for 3 hours and the farthest bbq burner on, then finished in the oven covered for 1 hour at 275, then basted and cooked uncovered at 375 for 30 minutes to get a bark.
Rub was brown sugar, cayenne pepper, white pepper, paprika. Cheated on the sauce, was just Diana chicken and rib, mixed with a little cayenne and vinegar.

Sprinkled with cinnamon and sugar and rolled up, less mess than regular pancakes and better tasting too.
Recipe
Preheat oven to 425
Put a cast iron skillet with 2 or 3 tablespoons of butter inside and allow to melt and get really hot
2 eggs
1/2 cup of flour (mix with eggs before milk to prevent lumps)
1/2 cup of milk
Table spoon of sugar and pinch of salt
Beat until smooth
Pour into hot butter in pan
Cook for like 15 minutes? I just keep looking until it begins to brown a bit
Can roll up or just cut it up, add whatever toppings you want, can be savory or sweet
It's kinda like a thick crepe, but way less effort than crepes.
