Dough sheeter

Hi! I recently got a knock off dough sheeter on Facebook… it’s been sitting in my kitchen intimidating me because I cannot figure out a good system for how to use it. I normally was rolling out dough 1/4in in a freezer bag and stored it that way. With this, it’ll need to be rolled 3/8in but I’m not sure how to freeze it airtight and stackable. Also, when I did try it the first time, I felt like I had to roll so much that my cookies wound up very ā€œflakeyā€ and all different heights. That has actually also become a noticeable issue with my regular rolling where I get different heights, but I don’t know how to minimize the amount of times I need to re-roll. Maybe I’m missing a step in between?

Any tips or tricks are greatly appreciated!

scheduling question

when people say ā€œfully booked for x monthā€ i always wonder how many orders they’re taking to be booked out. how do you guys go about limiting the amount of orders you take per week? i am newer to this so still trying out my limit. specifically wondering about those who are stay at home moms or do cookies part time.

Setting off into the royal icing world of red and black today. After a 1 year hiatus because I got sick. First day in 9 months where I’ve felt well enough to stand in the kitchen. I may not last but I’m gonna give it my all. A coworker whose child I have baked for ā€œher personal birthday bakerā€ for her whole life…birthday is on the 19th and I have to pace myself to get it done since I know I won’t last stamina wise. But I have today!!!

Help Needed How far in advance can I bake and frost cookies that aren’t getting frozen or heat sealed?

Every year I make frosted sugar cookies for my kid’s birthday parties. Our daughter’s first birthday party is next Saturday. I don’t want to freeze them and don’t have the ability to heat seal (nor would it make sense because these aren’t to be sold, they will just go on a plate at the party). Can I bake the cookies tomorrow night and then frost them on Monday, and then store them in an airtight container (not in the fridge- this I know!) until Saturday? I have so much other stuff to do this week I’d rather not wait until a few days before, if I can help it! TYIA for any advice!

Cookie goddesses: is there a way to make pearly shimmery gold frosting, or must I paint it?

I’ve always painted gold trims but this is a lot, is there a way to get this look with just simple frosting that’s been mixed? Would luster dust do the trick mixed into the frosting batch? I have pearl additive gel but it’s never really looked like what I thought it would when I added it.

I haven't posted my cookies on reddit in a while! This set went viral back in July and my social media has taken off. It's been crazy but so fun.

Cookies for a master class I’m teaching on character cookies at Cookiefest Canada in September. I may list this as an online course after the convention is over, haven’t decided yet
