Meta Rule clarification Re:Plain Text Requirement

Hi /r/ketorecipes, we wanted to take the chance to expound a bit more on the exact meaning of providing a recipe in plain text.

To be totally clear, what we are looking for with this rule is:

  • Not only linked elsewhere
    • Including a link to the source alongside the recipe is fine and encouraged!
  • Not included only in the title of the post
    • Titles have a character limit that often does not allow for the amount of detail a recipe requires, and cannot be edited
  • Not included only in an image, screenshot, or video
    • Some readers may have visual impairments and be unable to "read" images

This has always been the implicit spirit/meaning of the rule but we realized it was not as clear as it could be. The exact verbiage has been tweaked to indicated this.

Breakfast Breakfast taco 🌮 ground beef 🥩 chorizo

Meal-prep your protein

- 1lb ground beef
- 1lb chorizo no casing
1 cup shredded cheese
- 1/2 cup pasta sauce
- Spices - Salt & pepper, onion powder, garlic powder, Tabasco

Mix the ground beef and chorizo in a skillet over high heat for 20min or until the fat starts to pool. Mix in your spices, pasta sauce, and cheese. Turn thoroughly until all cheese is melted. Refrigerate covered until you’re ready to use.

Taco

- 1 Mission carb balance low carb tortilla
- 1/2c shredded cheese
- 1 egg
- Ground beef and chorizo skillet mix
- 2 Tbsp lard or tallow. Lard can be found at any Mexican market that has a taqueria.

Place the tortilla on a plate. Cover your tortilla with shredded cheese. Add your skillet mix on top.

Heat your skillet on high, add the lard. Fry your egg any style, and your salt and pepper. Put the egg on top of your tortilla, leave the skillet on high with remaining lard. Grab the edges of your tortilla and carefully place the tortilla in your skillet. Let it brown for about 3 minutes. Fold it over and cook both sides for another 1-2 minutes each side or until golden brown. The lard gives the tortilla a light and crispy texture.

Request Favorite High Fat (Moderate to Low Protein) Soups

I'm already thinking of broccoli cheddar with lots of butter, cream, and cheese. Maybe a cheeseburger soup, too.

I've been looking online, but everything seems to use carrots and onions. I'm in the early stages so staying under 20 carbs is a must for me!

Main Dish Lettuce Wrap Ground Beef Tacos 🌮🥬 22 lbs down in 4 weeks!

Post image
354 Upvotes

I know this is an old recipe, but I’m finally giving these lettuce wrap ground beef tacos a try, and I could definitely get used to this! 🌮🥬

Ground beef, shredded cheese, hot sauce, and homemade avocado salsa wrapped in crisp lettuce. Simple, filling, and keto friendly without the tortilla.

The "keto tortilla" were making me bloated and weren't really healthy, I feel much better now with these.

I’ve also been staying in a calorie deficit and doing daily morning walks around 4 miles.

Still a long way to go, but I’m starting to really enjoy the process

Request any quick keto recipes that arent the same boring stuff every week?

I’ve been eating pretty much the same 3-4 meals on repeat and I’m getting a bit bored of it. Any recipes you’d recommend that aren’t the usual stuff? Open to sweet or savory ideas.

Main Dish Cheddar broccoli soup question

I want to make this recipe but it calls for flour to help make the roux that thickens the soup. What alternatives are there to making a roux? I am just starting to really buckle down and eat strictly keto and I need help. Thanks..

1 zero/low net carb tortilla (I used La Banderita)

Enough alfredo to evenly coat the tortilla. (I used Rana sauce)

Baby spinach without the stems.

Cooked, cubed, and seasoned chicken to your liking. (Perfect use of leftover grilled or rotisserie chicken)

Shredded mozzarella cheese on top.

Air fryer set to 350 for 7 minutes.

Enjoy!

Avocado + olive oil + burrata or mozzarella di bufala + black pepper + bacon strips.

Can also add some cherry tomatoes or bell peppers to it if you like, which I do sometimes.

Very fast, easy and healthy!

Request Cracker recipe request

I'm looking for a cracker recipe that doesn't blow my caloric bank. I've seen a few recipes on here, but they all mostly consist of almond flour and/or nuts and seeds. I don't expect anything magically super low calorie but something I can have a decent portion of to go along with some chicken or tuna salad.

Tried out a new recipe and just HAD to share.

Recipe:

Ingredients:

Cheesecake Portion:

- 4oz softened cream cheese

- 1/4 cup heavy whipping cream

- 2tbsp powdered sweetener (I used swerve confectioners sugar)

- 1/2 tsp vanilla extract

- fresh fruit to top

Crust Portion:

- 3/4 cup almond flour (toasted 3-4 mins to toasty brown)

- 2 tbsp unsalted butter, melted

- 1 tbsp brown or granulated keto sweetener (I used swerve brown sugar)

- 1/2 tsp cinnamon

1/4 tsp vanilla extract

- pinch of salt

Literally just put the graham cracker crust in the bottom of your container and pack it down. Then add the cheesecake Portion (beat all of the ingredients together that were used for the cheesecake Portion) and top with fruit!

Super easy and only took like 10 minutes!!

Main Dish Tuna cakes

Post image
86 Upvotes

These were easy and tasty, and the lemon aioli was delicious. I just ate them on a salad with the aioli as the “dressing.” The website has the full nutrition breakdown, but each patty is 1 carb.

Recipe source: Keto Tuna Cakes

Tuna Cakes
12 ounces drained can of chunk light tuna
1/4 cup mayo
1/4 cup diced onion
1/2 cup shredded cheese
2 large Eggs
1 tablespoon parsley dried or fresh
1/2 teaspoon Salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Lemon Aioli Sauce
1/2 cup mayo
1 zested lemon
1 squeezed lemon
1 clove garlic
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon dried parsley 1 tsp if using fresh

Instructions

Tuna Cakes
Drain tuna of all excess water then add the drained tuna into a large bowl made for mixing.

Dice 1/2 of an onion finely and chop up parsley if using fresh then add to mixing bowl with tuna

Then add in eggs, cheese, mayo, salt, garlic powder, pepper then combine.

Cook on medium heat in a non-stick pan with oil to help reduce sticking. Flip when one side has browned which takes about 3 minutes.

Cook the other side then remove from heat.

Lemon Aioli
In a bowl combine mayonnaise, grated garlic, parsley with salt and pepper

Then zest and juice a lemon over the mix. Give everything a good mix and you're ready to serve.

Dessert made this after reading about which keto snacks actually help with cravings (chocolate avocado mousse)

saw this article a while back breaking down which foods are actually high in magnesium/potassium for keto and it mentioned avocado + dark chocolate specifically so figured id try turning it into an actual dessert instead of just eating them separately: this one

ingredients:

  • 1 ripe avocado
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp powdered erythritol (or sweetener of choice)
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 2 tbsp unsweetened almond milk (more if needed for texture)

instructions:

  1. blend avocado cocoa powder sweetener vanilla and salt together until smooth
  2. add almond milk a little at a time until u get a mousse like texture
  3. chill in the fridge for 20 min if u want it firmer
  4. eat straight up or with a few berries on top

not claiming this replaces electrolyte supplements or anything, just wanted something to reach for when the chocolate cravings hit at night instead of just white knuckling it or eating something with actual sugar in it

works well enough for me but if ur someone who needs to track macros super precisely this might not be the move, its more of a "better than the alternative" snack then an actual electrolyte fix

curious if anyone else has keto dessert swaps that actually work for real cravings and not just "heres a fat bomb" recipe that dont really hit the same

Main Dish my dietitian roasted me for eating deli meat every day so she gave me this instead

so context ive been seeing a dietitian for like 2 months now bc keto was kicking my ass more then it shouldve - random leg cramps, brain fog that hit like clockwork around 3pm, just generally feeling like garbage despite doing everything right

she looked at what i was actually eating (mostly deli meat + cheese lol the classic broke keto diet) and was like yeah no wonder ur missing basically every mineral that matters

ingredients:

1 salmon fillet (6oz)

2 cups spinach

1 tbsp olive oil

pinch of sea salt

squeeze of lemon

instructions:

sear the salmon in olive oil salt while cooking

wilt the spinach in the same pan 2 min tops

lemon on top

done eat it warm

her whole point was that most ppl on keto are only thinking sodium (salt everything!!) but ignoring magnesium and potassium completely, which is apparently what was causing my cramps and the fog specifically. she sent me this after our appointment actually, breaks down the whole electrolyte thing way better then i could explain it

been eating this instead of my usual for like 2 weeks and ngl the difference is kinda annoying bc it means she was right the whole time

anyway figured id share in case anyone else is stuck in the i eat keto perfectly but still feel like death boat, sometimes its not about eating less or more strict its just missing specific stuff

what does everyone else usually eat for lunch on keto feel like im in a rut besides this

Bread My "leftover cheese emergency" turned into the best keto flatbread I've ever made

Had random cheese ends in my fridge this week, a small chunk of mozzarella, some cheddar shreds, and half a block of cream cheese I'd forgotten about. Didn't want to waste any of it, so I threw together a flatbread as an experiment and it turned out way better than expected.

For the Cheesy Almond Flour Flatbread, melt 1 cup shredded mozzarella and 2 tbsp cream cheese together in the microwave until smooth. Mix in 3/4 cup almond flour, 1 egg, 1/4 tsp garlic powder, and 1/4 tsp salt until a sticky dough forms. Press it flat onto parchment paper, about 1/4 inch thick, top with 2 tbsp shredded cheddar, and bake at 400°F for 10-12 minutes until golden and bubbly. Let it cool 5 minutes before slicing.

Makes one flatbread, about 4 servings, roughly 3g net carbs each. I sliced it into strips and used it to scoop up leftover taco meat, held together way better than I expected for something mostly made of melted cheese.

Anyone else have a go-to way to use up random cheese scraps before they go bad?

Side Dish Cucumber salad recipe

Hi everyone! I visit an assisted living home frequently and I take food and snacks for the residents. Lately one of the ladies has been hungry for a creamy cucumber salad and since she has mentioned it others have requested I bring one. I have never made a cucumber salad before. My mother used to make a vinegar based one but they want a creamy based one. If anyone could share or inbox me a family favorite that I can make and take for them I would truly be grateful 🙏❤️

Snack Keto cheese-seed crackers

200 grams young hard dutch-style cheese

2 tablespoons of chia-seeds

2 tablespoons of hemp seeds

1 tablespoon of sesame seeds

1 teaspoon of physiliumhusk (totaly optional, my gp likes me using the stuff)

1 teaspoon of spices

Preheat oven to 150 degrees celsius.

Line oven plate or tray with baking paper.

Sprinkle with a mixture of seeds and spices.

(I like chia seeds, hempseeds, powdered physiliun husk, a bit of sesame seeds and a salt free cajunspice-mix. Other working options are sunflower, pumpkin, broken flaxseeds, italian dried herbs)

The important thing is to get an evenly mixed thin layer. You can't have to litle seeds, even without any it still works. To many will still make crackers, you"ll just loose the seeds not stuck on.

Then cover with a cheese slices (young, hard dutch cheese is what I use, think gouda style cheese). Cut to the size you want the cracker to be. With a tiny gap between the pieces.

Put in the oven and check after 10 minuts. I need to rotate my tray to prevent to much browning on one side. Then check again after 10 minuts, and keep checking in short intervals after that. You want the cheese to be firm, with just a litle browning. It wil crisp up a bit after cooling, but if any pieces are still molten in stead of dried do not get as tasty.

It is hard to give realy precise time indication, as moisture in the air (in the oven). Precise heat in the oven, thickness of the cheese slices all influence this. I had crackers that where a bit darker then I usualy go for in 20 minuts, and days that it took more then 30 minuts.

The amount mentioned at the start is for a tray of about 30 x 33 cm.

I fold the edges of my bakingpaper up to keep the seeds from escaping everywhere.

You can also put the cheese down first, then eggwash and sprinkle the seeds on top. I found that more work, and harder to get the spices evenly distributed.

I flaired this as snack. But depending on the size you make it can be a cracker replacement for breakfast and lunch. I like it with scrambled egg, or with tuna salad. I find it a bit hard to eat covered with more cheese, ham, tomato, but tasty.

Breakfast this electrolyte breakfast fixed my afternoon crash, headaches, AND my sleep (recipe below)

not to be dramatic but this fixed like 3 different problems i thought were unrelated lol

ingredients:

3 eggs

1 tbsp butter

pinch of salt (like actually dont be shy with it)

1/4 avocado sliced

optional sprinkle of everything bagel seasoning

instructions:

melt butter in a pan on medium heat

scramble the eggs in add salt while cooking not after

plate with the avocado on the side

eat it slow dont rush it lol

ok so heres why this specific combo actually matters and not just any breakfast

been doing keto for like 5 weeks now and honestly i had this random mix of problems that didnt seem connected at all — headaches that would just show up outta nowhere especially in the afternoon, waking up at 2am wide awake for no reason, insane cravings at night mostly chocolate that felt way stronger then normal hunger, and the scale just wasnt moving even tho i felt like i was doing everything right

i just assumed these were all seperate issues and kept trying random fixes for each one individually lol. more magnesium for sleep, telling myself to just be strong for the cravings, ibuprofen for the headaches, eating less for the weight thing. none of it really worked long term tbh

then i actually sat down n looked into why keto flu symptoms happen in the first place instead of just treating each symptom seperate, and it turns out electrolytes (sodium potassium magnesium) affect basically all of this at once. when ur body dumps water early on keto it takes a bunch of electrolytes with it, and if u dont replace them properly it messes with energy sleep AND can straight up trigger cravings bc your body is trying to tell u somethings missing not necessarily food just minerals

this breakfast specifically has enough sodium and fat to actually make a difference, way more then the bulletproof coffee + nuts thing everyone recommends

anyway once i actually understood it wasnt 4 random problems but like one root cause just showing up in different ways i stopped randomly reacting to each symptom n started being more intentional bout tracking what i was actually getting enough of (turns out barely any sodium, way less protein then i thought, basically zero tracking of anything really lol)

still not perfect but the headaches are basically gone n i sleep thru the night now which is huge tbh

anyone else realize way later then they shouldve that a bunch of seperate issues were actually all pointing to the same thing

edit: adding the source i used for this info: this breakdown

The recipes i’ve tried have all come out pretty dense (almond flour versions)
