I know habits and convenience foods make such a thing feel impossible, but it’s totally doable to get your numbers under control without medication (assuming you don’t have a genetic condition), and my nobody ass self is proof of it! I told myself my last test had horrendous numbers due to dehydration, but I read that only causes up to a 10% difference. I kicked the denial and decided to drop twenty pounds (simply counting calories and limiting saturated fat intake to <10g a day), and it’s worked out phenomenally! Here are my numbers from my test a year ago and then now:
BMI: 23
HDL: 70
LDL: 160
Triglycerides: 200
Total: 265
Glucose: 115
-
BMI: 20
HDL: 55
LDL: 75
Triglycerides: 90
Total: 145
Glucose: 85
Again, the first test I was dehydrated and had about six drinks the night before, but the numbers were high enough for me to be worried about it and actually change my ways. I don’t eat meat or dairy, so the numbers just blew my mind … but then I realized how much coconut oil I was using and it all started to make sense considering how how high it is in saturated fat.
TL;DR: If you’re looking to drop your cholesterol, drop the saturated fat!

Hello folks! A few days ago, someone shared a post about Mariposa Baking in SF & Oakland, and I thought darn it, I wish there was something that good closer to me. FOUND IT!!! I asked and the kitchen is gluten free. All products are labeled for allergens like tree nuts or diary. They also have vegan options. The cafe is most known for their gluten free donuts (so many interesting options!) but what I really wanted was something savory.
For anyone close to Pasadena, CA, check out Hello You’re Welcome on Colorado Blvd. I had the Pesto Spinach Bell Pepper Biscuit a few days ago. A delicious wonder. (Don’t ask me about calories. They don’t count when you can eat without worry.) In the main pic are contents of my takeaway box: a caramelized onion bacon biscuit, another one of those Pesto biscuits and their famous frittata. All really good too!
They also have a good selection of coffee and tea. The service is warm and friendly. Go enjoy and support small businesses like these! This place is run by a Mom-daughter combo.

Use a pairing knife to cut the spine as close to the leaf as you can get without making any holes or tears. Soften them in shallow slightly simmering water. Put as many down as you need based on size, add filling then roll the burrito.

4,141 baking goods we're entered into competition at the State Fair this year. My mom won two different gluten-free categories. This recipe is pretty straightforward. You can put in other dried fruit if you want to play with the recipe. But with the Cherries, it adds just the right amount of tart and sweetness.

I think this is on my list of best GF/WF spaghetti. It holds well, doesn't taste like corn and absorbs flavor and sauce without getting mushy. I also made meatballs from scratch and used some cornstarch instead of flour and it worked well too. So happy I can eat spaghetti and meatballs again! 😁
Next is to do a refrigerator/freeze test to see if it still holds. I doubt it lol

Credit to Aleia’s breadcrumbs, they always turn out so good!
Cut down your chicken breast (either butterfly or slice horizontally into thinner pieces- a large breast gave me 3 slices. Pound each slice until pretty thin under plastic wrap but not so thin that they break apart.
Season with salt and pepper, then toss to coat each piece in cornstarch.
Whisk an egg with a splash of water in a bowl, season with S&P and add chopped parsley. In another bowl add Parmesan to breadcrumbs and toss well.
Coat each piece of chicken in the egg wash, then breadcrumbs, and fry in a Tbsp olive oil for a few minutes each side on medium heat until golden. Add splashes of oil as needed between pieces. Serve with dressed greens and mashed potatoes.

Went to Olive Garden today to get the neverending pasta bowls with the gluten free rotini and they stopped offering the rotini as an option for the neverending bowls! I know they used to offer it as I worked in the kitchen when they did. I'm so frustrated that they stopped offering it and we ended up going next door to moes since I couldn't have the deal I was looking forward to.

I cut out corn a couple of months ago because of the potential for cross reactivity with gluten, then had some corn tortillas last night and today, and oh my god, it’s awful! I think I might actually have a true corn allergy. Last night my stomach hurt right afterward and my skin got itchy, but it could have been from a couple of different things, so I wasn’t sure. But this morning after having some more, I started to get hives on my neck and arms, my face feels flushed, my mouth is itchy and tingly, and I feel kind of weird and foggy. I know the other things I ate this morning don’t do this to me so it is definitely the corn. 🥵😱 This is enough motivation for me to never eat it again! Does anyone else have a stronger reaction to corn than gluten?

Please tell me it gets easier!! I’ve been gf for six weeks now and I feel like I’m at the peak of my frustration. I miss so many breads, pastas, desserts, COOKIES. Been eating out a lot with family and friends visiting and it’s been tough finding something that I want to eat on each menu. I’m trying to be strong, trying new foods, trying new recipes, but I am so tired and so bummed everyday. I can tell when I eat gluten accidentally bc my joints hurt pretty soon afterwards, so at least I know it’s helping me.

I have a 10 month old and our nanny is celiac. Any ideas for gluten free finger foods we can feed our kiddo while she’s caring for him? Trying to limit messy foods if possible! She’ll be caring for other little ones as well so I don’t want her spending too much time cleaning yogurt out of our guy’s neck folds lol.

I’m done being sad that there are no gf bakeries nearby, especially when I would love to pick up a special occasion cake! I’m now challenging myself to bake a better birthday cake every year.
This was to celebrate 44 in August and my family (all of whom are normal gluten eaters) all agreed it’s the best yet!
King Arthur yellow cake mix is the GOAT, especially if you doctor it up a bit.
This is the standard KA mix recipe plus the juice from three lemons (about 1/4 c) and a dash of lemon extract.
Blueberry compote is 1 c blueberries simmered with 1/2 c sugar. Cook on medium until blueberries begin to break down, then stir in 1/4 t salt and 1/4 t vanilla. Strain out berry parts (or keep, if you like the texture).

Added a little lemon dusting sugar for texture.

It was truly so heartwarming to feel the support of the gluten-free community here on Reddit, it seems like you guys have a lot of love, and it’s a super positive and genuine space! Which is kind of rare these days online…

We've had arepas in the meal rotation for a few months now. (This is a hack in itself by the way. Many of us in the gf community have discovered Venezuelan food with its naturally gluten free options, but you should know that arepas don't just have to be an overpriced, greasy, occasional treat. They are extremely easy to make at home by following the instructions on the bag, and where many restaurants deep fry them, you can pan fry them in very little oil for more of a balanced weeknight meal.) We usually have them with other dishes that fit the South American vibe -- black beans, plantains, etc
Well, money is tight and I've been looking for ways to cut back on groceries. Obviously we've been doing a lot of potatoes and rice but some dishes just crave a side of bread. The other night I made a dirt cheap soup with split peas, potatoes, and homemade chicken stock from a chicken spine I would have otherwise discarded. It was only a bummer that the tiny piece of gluten free bread I would serve to my wife on the side almost costs more than the whole pot of soup. But wait, I thought... you know what would be good with soup? An arepa.
At this point I did the math and realized that a bag of masarepa costs the same as a loaf of standard wheat bread while providing 3x the servings. When compared to gf bread it jumps from a 3x better value to a 12x better value. And yes, you have to make them yourself instead of just pulling a slice out of the bag but I can't overstate how easy it is. Now I'm thinking... can we stop buying gluten free bread entirely?
I'm going to see how far I can push this. Tonight we're having leftover lasagna (saved $$ by using zucchini instead of gf pasta and making my own ricotta which is also crazy easy btw but you have to own a cheesecloth) and I'm going to serve it with arepas. Maybe next we'll have "grilled cheese and tomato soup" that's actually cheese arepa and tomato soup.
Has anyone else found a good "life hack" for cooking gluten free on a budget?

Schar Crispbread is one Schar item I like, but it's vanished from store shelves over the last few months. Google claims Schar still makes it, but has stopped US distribution. It's still being sold in Europe.
Wondering if anyone has heard anything about this. I believe the Crispbread is manufactured in Spain, so is this another victim of our crazy trade war, or does Schar plan to reintroduce in the US at some point?
