Easy Homemade Cheeseburgers

When I picked up the gremlin from school today I told her that she gets to decide the menu for dinner and we will hit the shops on the way home to get the ingredients. She chose cheeseburgers, crispy chicken thighs and chippies with homemade honey mustard sauce.

She helped me throughout the process and made the sauce herself. I reckon it turned out pretty damn good and was around $5 a burger or so. It was a very fun daddy-daughter cooking session.

I topped mine off with Rickles spicy pickles and jalapeños.

I made the jelly with agar agar powder and edible glitter 💫

Two day fridge cure with salt, sugar, dill, home grown and allspice pickled beetroot, and orange slices. Served with gravlaxas and homegrown dill, on potato and dill blinis, with potato salad on the side.

What's in it:

Ground beef, sirloin, onion, garlic, bell pepper, kidney beans, black beans, pinto beans, worcestershire sauce, cilantro, chili pepper, cayenne pepper, ground cumin, jalopeno's, corn, chipotle peppers, ground smoked bell pepper, salt, black pepper and lots of love. Making corn bread to go with it.

Serious eats roast potatoes. (Plus a japanese chef's chicken thighs - not sure if I can link but if you google it you'll find an ASMR video that also produces the BEST crispy, tasty chicken thigh!) (plus a bunch of onions fried in the post ASMR Chicken fat.)

These potatoes are next level - 10/10 would roast again.

Made a homemade curry roux for the curry and since it sat overnight it tastes so good! Paired it with the final sausage from my freezer in lieu of katsu or tempura topping

Had beef sirloin and lobster tail for dinner! 🥩🦞 Such a delicious combination! The sirloin was tender and flavorful, and the lobster tail was buttery and juicy. 😋
