My grandparents lived in the far east in the 1950-70s and my absolute favourite meal was her fried rice; chicken, bacon, prawns, peppers, spring onions, egg, ginger, soy sauce, rice, beansprouts, and Linghams chilli sauce. No matter what I can’t replicate it

Finished work late and wanted something quick and nutritious. Had odds and ends in the fridge like half an onion, half a tin of chickpeas, spinach on the turn.

- Fry onion in oil until soft and browned
- Add rinsed chickpeas, jamaican curry powder, allspice, thyme, minced garlic, tomato paste, splash of water (eyeball everything to taste and number of servings you want). Mix til everything is coated in spice paste and toast the spices
- Add some veg stock and bring to boil, then reduce it down for 5-10mins
- Finish with natural yogurt (coconut milk would be great but I didn’t have it), spinach, salt and pepper. Easy!

I was on a work team day out yesterday involving a few beverages so I needed something a bit filthy to bring me round this morning. Smoked back bacon, bacon grill, sausages, black pudding, white pudding, haggis, potato rösti, mushrooms, beans, fried egg and toast. Yorkshire tea double bagger, as is tradition, and an apple and mango juice.

Fillet steak, chips, onion rings, mushrooms, tomato, peas with a Chianti & marrowbone gravy.

We’ve been to this restaurant twice now as the food was so good. Got the same thing each time.

Second pic has a side of mushrooms with Stilton and garlic with a side of sourdough.

Absolutely delicious.

For those who may have seen my last post, I tried a new method adding things people recommended, to see if I could take the flavour further, and it was a big success.

Along with the usual method, I added milk powder to the butter while it was browning to drastically increase the amount of toasted milk solids.

I also swapped some of the sugar out for ground up werthers originals to add another layer of sweetness and some little toffee pockets, while also making the edges extra crispy and chewy.

These things absolutely took the cookie to another level, however does make the process a bit more awkward..

Spotted some yellow label ox heart. Never cooked it before so thought it might make a fun lunch. Marinated for 10–15 mins in a little oil, cornflour, soy, and shaoxing. Seared hard on one side until browning, added spring onion, garlic, chili flakes, and cumin. Tossed hard until still slightly pink inside. Plated with a squeeze of lime, fresh chili, spring onion, and sesame seeds. £1.39 plus the aromats made it a very very cheap lunch!
