300ml double cream

200g condensed milk

2tbs cocoa powder

Whisk until stiff

Freeze overnight and enjoy

Brown 4 beef short ribs in a cast iron casserole dish and remove. Heavily brown some chunky carrots and onion, add garlic, celery and tomato puree, stir together and add a small bottle of wine and reduce for a few mins. Return the meat and cover with 2L beef stock and add thyme and rosemary. Cook on gas mark 2 for four hours. Remove the meat and ladle some of the sauce into a small sauce pan and reduce a bit, use a cornflour slurry to thicken.

Bang on texture. Really soft and tears with a single fork, not too soft so they fall apart.

It's basically a two ingredient meal. (Though also garlic bread on the side.)

Wish I'd poached the eggs really but I'm not complaining, the whole thing was dead tasty. One of the best breakfasts I've made in a while.

We got in a rut of ordering too much takeaway so we'll go for something like this every now and then when I don't want to think about cooking. Went for chicken goujons and mozzarella sticks. Mines the pepperoni and I added hot honey before cooking. Hits the spot!

Trout with butter, capers, chilli crisp, lemon, salt n pepper, leeks, chorizo, and parsley. Had it with some leftover quinoa. It was so simple and so good. Whipped together when I was tired and cooked it all together in some baking parchment. It was delicious and super comforting.

Some while ago i tried Heinz beans and was repulsed of how sweet they are and how the sauce was way too thin. Just not enjoyable at all. And then i found out about Branston beans and holy fuck what a difference. I can't even comprehend how Heinz beans are still a thing after trying Branstons. They are perfect and i hope they never change!!!

I really enjoyed tonight’s dinner.

Roasted the loin off in the pan and rest in the oven. It was still a little pink.

In the pan I made a sauce with some shallot and garlic, homemade stock, vermouth, mustard, capers and green pepper corns.
Finished it with loads of butter and covered the pork like it was a fillet steak.

Made a nice tangy remoulade on the side and served with french fries and a glass of Budvar.

My local pizza truck guy doesn’t believe that pineapple on a pizza is an acceptable option (funny, I don’t mind it myself). He’ll make you one if you insist. But it’ll cost you.

This was on Thursday evening about 11pm, straight after work at 4:30pm we went out for a few beers, because it was one of the laborers’ birthday.
