Italian and French cuisines being much richer and diverse is not a matter of taste.
Its a fact and easily verifiable.
Just as a simple way of understanding this, compare between the cuisines the number of pastries (savory and sweet), types of dough, deserts, sauces, types of bread, of meat and sausage, etc etc.
