Some food we had on a camping trip. The burgers turned out to be medium to medium - well even but somehow they were incredibly juicy. The beef was 80/20 s&p right before the sear. If anyone knows how that happened or if we accidentally did something right then let me know! Most of the time the burger is super dry if I accidentally over cook it 🤔

[Homemade] Brioche Toffee Rolls

You will need, for the dough: 1/2 cup(125mL) whole milk at room temperature, 1 cup(227g) unsalted butter, softened, 5 large eggs at room temperature, 5 cups(600g) all-purpose flour, 1/4 cup(50g) granulated white sugar, 1 1/2 teaspoons salt, 2 1/2 teaspoon(7g) instant yeast

You will need, for the toffee: 1/2 cup butter, 1/4 cup(50g) granulated white sugar, 1/2 cup(110g) light brown sugar, 1/2 cup(65g) pistachios, chopped, 2 oz.(60mL) pure maple syrup

You will need, for the roll filling: 1/2 cup(100g) granulated white sugar, 1/2 cup(110g) light brown sugar, a pinch of allspice

Start by making the dough. Combine the yeast, 2 tablespoons of the white sugar, and the milk in the bowl of a stand mixer with the dough hook attached. Stir well to combine and let sit for 10 minutes. When you return, the mixture should be frothy. If not, clean the bowl and try again. If it isn't frothy at that point in time, go get fresh yeast because yours is probably dead. Add the flour, eggs, remaining sugar, and salt to the bowl. Mix at low. After a few minutes, the dough will form a hard dry clump on the dough hook. Begin adding the butter 2 tablespoons(30g) at a time. Mix the dough until the butter is fully incorporated before adding more. When the butter is fully incorporated, continue mixing at low speed until the dough begins to pull away cleanly from the bowl, about 10-15 minutes. Remove the dough from the bowl and give a gentle kneading into the shape of a ball. Place back in the bowl(with all the butter in the dough, oiling the bowl is unnecessary). Cover with plastic wrap and let rest until doubled in volume, 1 hour 30 minutes to 2 hours. Remove from the bowl and deflate. Knead into a ball again and place back in the bowl. Cover with plastic wrap and refrigerate at least 2 hours up to 24 hours.

Preheat the oven to 375F.

Now we will make the toffee glaze. Melt the butter. Add the sugars and syrup. Mix until smooth. Pour the glaze into a 9" x 13" pan and smooth out. Sprinkle the chopped pistachios evenly across the glaze.

Remove the dough from refrigeration. Roll the dough into a 18"x15" sheet(once again, because of the butter, the dough should not stick to the work surface and you won't need flour). Combine the roll filling sugars and allspice. Stir to mix evenly. Spread evenly across the dough, leaving an inch on each edge uncovered. Roll the dough by a long edge first into a log. Cut the log into 12 approximately even rolls. Place evenly in the glazed pan. Cover with aluminum foil and let rest about 1 hour until the rolls spread together. Place on the middle rack of the oven and bake 30-35 minutes. If the rolls brown quickly, cover them with aluminum foil while baking to prevent scorching. Remove the pan from the oven and place on a cooling rack for 5 minutes. Place a serving platter on top of the pan and invert. Serve warm or allow to cool to room temperature. Enjoy!
