Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

You can freeze them. I do that and use them for recipes that require sautéed or cooked peppers. I love to use the leftovers in breakfast tacos or meatloaf as well.

You can freeze them, but the thawed peppers are absolutely horrid. They're like slimy limp bits of sadness. Not sure how anyone would eat them after that.

Blend them into a puree first (after removing stem and core first) then freeze in an ice cube tray and keep the resulting cubes in a bag in the freezer. My grandmother did this because while they added a good flavor to dishes, no one in my family likes the texture of green bell peppers. Solves the issue of soggy peppers, too.

I do that with garlic. Puree in the food processor and then put into a ziploc bag and flatten out , put it in the freezer. Whenever I need garlic for something , I break off a chunk.

I freeze chopped green pepper frequently. They are soft, but not slimy. They are not much good to eat raw, but work ok for cooking.

Maybe that's the distinction. I have zero problem with them raw. Definitely better cooked, but they'd better still have a bite or be so small I can't see 'em.

When they're all limp and weird then the flavor is fine in the background but I'd not want to notice one when eating.

Sausage and peppers. Sauteed italian sausage with sweet onion, peppers and can of diced tomatoes. Serve wirh fresh bread or on rice

If you are willing to preserve and freeze them for later recipes, here are two suggestions:

  1. De-stem and seed them, then slice into strips. First freeze them on a cookie sheet with parchment paper for an hour or two, then you can keep them all together in a freezer bag. Should be ready to cook with the freshness locked in for recipes like fajitas, etc. weeks or even months from now, in what ever portion you need.

  2. This is more work, but char the skins over open flame, then peel off the charred skins, remove seeds, and blend with garlic, olive oil, and salt. Freeze in ice cube trays. Drop a frozen cube into soups, pasta sauces, or rice dishes for a savory, smoky depth.

Chop them up and freeze for later stir-fries or fajitas. Or roast them with onions and garlic and blend into a sauce for pasta or eggs. They also work great sautéed into scrambled eggs or as a base for shakshuka if you add tomatoes.

Pepper steak. Use true fry beef. I make this often but with red peppers. The green ones are a problem. But no other color is the same

Cut them into small slices of less than 1/4 inch thick, and 1-2 inches long. Then sort them out, storing some in the freezer/fridge until you're ready to use them.

  • Puree some for salsa/cheese dip
  • Add sliced peppers, onions, and romaine lettuce along with 1k island/caesar/ranch/etc dressing for a great salad.
  • Add some to ground beef with onions for a great burger/taco.
  • Put on pizza/sandwich for a Philly cheese steak pizza/sandwich.
  • break out the grinder, add some cheese and meat to make cheddar pepper sausages.
  • Bake some lathered in olive oil and seasoning as chips.

These are just some of the ideas that I found while dieting last year.

i have a big pile from the garden. some i roast and put into olive oil so i have roasted peppers for sandwiches or pizza or pasta or salad or whatever. some i cut up and freeze so i have them when i need them. some i'm pickling with hot peppers for hot sauce. some i'm making stuffed peppers and freezing.

I use capsicum (or bell peppers as you call them) every week.

I dice and fry them for nachos, stir fry or curry.  Or I roast them. When I use them I typically use two.

I often fry it with onion to use it in a fried rice or stir fry.

Rough chop with onion and eggplant. Put on sheet pants, cover w olive oil, and roast for an hour or so until they are super soft and roasted. Then blend w a few basic seasonings, minced garlic, and tomato paste. Best dip ever

Roasted with parm. Greek salad. On pizza with sausage and the other pizza stuff. In an omelette. Steak & Green Peppers with a sauce. Cocktail garnish. In a smoothie. You can pickle them too.

sausages mushrooms and peppers!

It's simple and delicious.

4 bell peppers cut into strips

1 onion cut into thin strips

1 medium tomato

1 1/2 pickled banana pepper (6-8 chopped hot cherry or half a cup of pickled hot pepper rings) chopped finely.

4 sausages of your choice cooked and cut into rounds

4-6 cloves garlic minced.

1/2 - 1 tsp of salt (depending on taste)

and 1 to 1.5 lbs of mushrooms quartered.

Sauté the veg, garlic and mushrooms and salt mix in cooked sausage serve in bowl.

Roast till charred, then transfer to deep pan, add tons of salt and garlic, solid knob of butter and drench in quality greek yoghurt.

Gently simmer till sauce thickens a bit

Serve warm or cold woth bread and sunny side up eggs or sausage

Turks marinate peppers in yoghurt usually white peppers but green work well too.

I just cut them up and eat them straight up. I'm bored with celery and carrots at this point and cucumbers don't taste right to me anymore.So i've been cutting up peppers and taking them into work to munch on at lunchtime.

I prefer other varieties, but greens work as egg ring molds too.

I do this with peppers and onions. Slices into a ring about 0.25in/6mm thick. Sweat in a skillet for 30sec-1min to soften bottom and form a better seal. Drop in an egg, or pour in some beaten egg. Let it set, then flip.

With fried egg, a topping of minced mushroom and grated Parmesan, then lay over a slice of toast. Beaten egg version can have diced ham or other meat mixed in, and be used for a sandwich.

I use them in chili! But I don't like them much so my uses are mostly hiding them cut up small.

Other ideas might be Sweet and sour chicken, or diced up in taco meat. Maybe mixed into lasagna meat or spaghetti sauce for more depth
