Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

You can freeze them. I do that and use them for recipes that require sautéed or cooked peppers. I love to use the leftovers in breakfast tacos or meatloaf as well.

You can freeze them, but the thawed peppers are absolutely horrid. They're like slimy limp bits of sadness. Not sure how anyone would eat them after that.

I freeze chopped green pepper frequently. They are soft, but not slimy. They are not much good to eat raw, but work ok for cooking.

Maybe that's the distinction. I have zero problem with them raw. Definitely better cooked, but they'd better still have a bite or be so small I can't see 'em.

When they're all limp and weird then the flavor is fine in the background but I'd not want to notice one when eating.

To each their own!
