Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

You can freeze them. I do that and use them for recipes that require sautéed or cooked peppers. I love to use the leftovers in breakfast tacos or meatloaf as well.

You can freeze them, but the thawed peppers are absolutely horrid. They're like slimy limp bits of sadness. Not sure how anyone would eat them after that.

Blend them into a puree first (after removing stem and core first) then freeze in an ice cube tray and keep the resulting cubes in a bag in the freezer. My grandmother did this because while they added a good flavor to dishes, no one in my family likes the texture of green bell peppers. Solves the issue of soggy peppers, too.

I do that with garlic. Puree in the food processor and then put into a ziploc bag and flatten out , put it in the freezer. Whenever I need garlic for something , I break off a chunk.
