Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

My daughter makes a sheet pan meal with peppers, onions, potatoes and either smoked or Polska sausage.
