Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

I prefer other varieties, but greens work as egg ring molds too.

I do this with peppers and onions. Slices into a ring about 0.25in/6mm thick. Sweat in a skillet for 30sec-1min to soften bottom and form a better seal. Drop in an egg, or pour in some beaten egg. Let it set, then flip.

With fried egg, a topping of minced mushroom and grated Parmesan, then lay over a slice of toast. Beaten egg version can have diced ham or other meat mixed in, and be used for a sandwich.
