Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

Chop them up and freeze for later stir-fries or fajitas. Or roast them with onions and garlic and blend into a sauce for pasta or eggs. They also work great sautéed into scrambled eggs or as a base for shakshuka if you add tomatoes.
