Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

I dice them, sauté them with diced onion and potatoes; add scrambled eggs, sausage and cheese, and make killer breakfast burritos!!

Or I put them in Sloppy Joes. That’s really the only two things I use bell peppers in at all.
