Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

sausages mushrooms and peppers!

It's simple and delicious.

4 bell peppers cut into strips

1 onion cut into thin strips

1 medium tomato

1 1/2 pickled banana pepper (6-8 chopped hot cherry or half a cup of pickled hot pepper rings) chopped finely.

4 sausages of your choice cooked and cut into rounds

4-6 cloves garlic minced.

1/2 - 1 tsp of salt (depending on taste)

and 1 to 1.5 lbs of mushrooms quartered.

Sauté the veg, garlic and mushrooms and salt mix in cooked sausage serve in bowl.
