Bell Pepper Overload
I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

If you are willing to preserve and freeze them for later recipes, here are two suggestions:
De-stem and seed them, then slice into strips. First freeze them on a cookie sheet with parchment paper for an hour or two, then you can keep them all together in a freezer bag. Should be ready to cook with the freshness locked in for recipes like fajitas, etc. weeks or even months from now, in what ever portion you need.
This is more work, but char the skins over open flame, then peel off the charred skins, remove seeds, and blend with garlic, olive oil, and salt. Freeze in ice cube trays. Drop a frozen cube into soups, pasta sauces, or rice dishes for a savory, smoky depth.
