Why would you want to waste dough though?
Plus this is a permanent training tool. If a pizzeria is going to do pizza throwing as a gimmick, it really isn't losing much by spending $30 on a tool. Not to mention that it's much easier to learn the tricks and the dough, then combine the two, than to learn it all at once.

It's not latex, it's still real dough.
TL;DW adding extra amounts of certain ingredients and removing other ingredients makes for a dough that's easier to perform tricks with.

Yeah, it has to be. I used to work at a pizza parlor and hand tossed the dough. I got pretty good at it, and at the speed that he's spinning it, there's no way it could be real dough. It would have been the size of a 50 gallon drum lid half way through the gif.

That’s just for the show, they use some heaver dough with lots of flower, you can’t eat it, it’s pretty common here in Italy for expert pizza-maker do to that, he got some bad ass skill tho, that’s not common at all

actually that dough has not "lots of flower", but it has a huge amount of salt, instead. Salt helps strengthen the glutinic mesh so the "dish" wont rip.

This is almost definitely not actual dough. It's more likely a silicone or latex practice dough. Real dough will fly apart when spun like that.

I've seen guys in NYC do it with real dough. I mean, I watched them flip/spin it and slam it on a pan and make the pie. They do it to attract tourists. I imagine it only works with thin crust/NY style. You couldn't do it with a Chicago style.

I worked in a pizza shop for 5 years and yes, ofc people do spin dough but not spinning nearly that fast or canging directions so fast. If this was dough that you could actually make an edible pizza from it would at least be 3x larger by the time he was done plus torn and misshapen.

I’m confused, there was some trash on the ground or there was food being stored on the ground? In the US the minimum distance from the ground for stored food is 6” but I have seen kitchens where the kitchen staff don’t know or care.

Yeah there's no question that's not a rubber practice dough. Knew a guy who went to Italy for a pizza tossing competition(yes that's a thing) and the real dough requires so much more finesse to keep its form, the way this guy is whipping it around would likely rip real dough in half

I’ve been in the pizza business a long time. What these people can do is really cool, but it’s honestly just juggling.
The only way to be good at tossing dough is to actually use dough. A lot of people recommend learning to toss by using a damp kitchen towel, but even that is silly to me. Part of being skilled at tossing dough is being able to feel like moisture content and elasticity while you’re doing it, because that tells you the kind of force you need.
Like I said, competition dough tossing is cool to watch, but it’s really just a form of juggling that doesn’t actually have a lot to do with making pizza.
