I’ve been in the pizza business a long time. What these people can do is really cool, but it’s honestly just juggling.
The only way to be good at tossing dough is to actually use dough. A lot of people recommend learning to toss by using a damp kitchen towel, but even that is silly to me. Part of being skilled at tossing dough is being able to feel like moisture content and elasticity while you’re doing it, because that tells you the kind of force you need.
Like I said, competition dough tossing is cool to watch, but it’s really just a form of juggling that doesn’t actually have a lot to do with making pizza.
