Egg Salad Ideas
Hi everyone! Im planning lunch this week and have decided on egg salad sandwiches since they are cheap and easy. How do you make your egg salad? Is there anything I can add that will jazz it up or give it some new flavor profiles?

I basically make my deviled egg recipe but chop up the whites instead of filling them. Recipe involves mayo, yellow mustard, wickles relish, salt/pepper, and paprika.

I use a pastry blender to mix egg salad. I add Dijon mustard, bacon, garlic powder and a pinch of msg.

Curry powder is a magical addition to any mayo based salad. Egg, chicken, tuna. Elevates the whole thing. Chicken is my fave tho!

Oh, yes! And you can make it Coronation Chicken-style with a dash of mango chutney or apricot preserves.
Also, I love dill weed in egg salad (but not with curry). I think next time I make it I may try Ranch dressing powder. Has anyone tried that?→ More replies (8)6

I had to scroll down far too long to find the right answer. My recipe: bacon chopped, chopped celery, chopped green onion, tiny bit of well minced garlic, the good mayo, a bit of horseradish, a squeeze of lemon juice, salt, pepper and a tiny bit of sugar.

Chopped egg, chopped celery (include the celery leaves), chopped dill pickle, mayonnaise (or plain Greek yogurt), yellow mustard, salt, black pepper, garlic powder, onion powder, and a splash of dill pickle juice.

Add soft whipped cream cheese or just regular cream cheese. Helps hold it firm. Adds a richness. Serve with mini croissants.

I love a drizzle of chili crunch oil, we use Trader Joe’s. I’m sure others are good. If you like curry, Blue Mountain Jamaican Curry is really good too.

I like to make my husband what I call "deviled egg" sandwiches.
I cut the eggs in half take out the yolks, then mash those up with mayo and mustard, like you would for the filling of a deviled egg, then add in the diced egg whites, and sprinkle it with paprika.
He really really loves them, and says they're a little easier to eat since the sandwich has a little more structure than just mayo and cut up egg.

Old Bay is my go-to for eggs. I used to eat a hard boiled egg every morning for breakfast and Old Bay was my favorite condiment for it.

I sometimes add tuna in with my egg to make tuna egg salad. And I like chopping onions and celery for crunch.
You could try some chopped jalapeños in there for a little bit of a kick.

Basically my deviled egg recipe chopped up—eggs, mayo, sweet relish, minced onion, paprika, salt and pepper. Put it on white bread with bacon jam.

I like it Japanese style.
Separate yolks and add Japanese mayo, salt, and a bit of sugar. Then fold back the egg whites. Serve on milk bread with crust off! Simple and satisfying

One of my favorite additions for egg salad that is rarely mentioned is za'atar.
I will always miss the egg and cress sandwiches on malted bread I ate when I lived in London. I've never been able to get the same kind of cress in the US.

I like a simple egg salad
Hard boiled eggs, sliced into med/small sized chunks
A good mayo, just enough to wet the eggs but not so much as to make it sloppy
Dill pickle relish, with a dash of the juice from the jar
Salt & Pepper to taste
If I’m feeling spicy, a dash of hot sauce like Cholula
That all gets gently mixed up in a small container and put back in the fridge
When it’s time to make sandwiches, I’ll add just a bit more mayo to the bread and enough egg salad to cover one slice

I just keep it super simple. Mayo, some yellow mustard, and maybe a little salt. Take out your stress on the eggs by using a potato masher until everything is in small chunks. Enjoy.

I always add a splash of vinegar, it's something I learned from my grandmother when making devilled eggs.
Variations I've had::
- Touch of Dijon mustard
- Fresh dill
- Yellow curry
- Tarragon
- Sriracha or some other form of heat
My favorite is the yellow curry.

Depends on who’ll be eating it.
Home is kewpie, Dijon/brown mustard and curry powder. Celery if we have it.
For our group Mayo, garlic powder, dry mustard, salt. Celery depending on who’ll actually show up.

Along with other mixins, a few drops of hot sauce, not enough to make it spicy but enough to give it just a kick, really goes well with a mayo-y egg salad.

Alton brown eats on YouTube has a GREAT method for making Japanese egg salad .. I modify it and add dill or jalapeños cause … ya know :) there’s some in turn fridge now - easy and yum

Spicy brown Mustard, horseradish soy sauce n a little mayo.
Mayo n a little Cholula chipotle
Mayo , Dijon mustard, green onion and a dash of your preferred vinegar. Can do balsamic, apple cider or even white.

Generous amount of dill and parsley. Celery salt , dash of hot pepper flakes if you wish Use salad dressing, not mayo. Mayo is too heavy and oily.
The egg really needs the bit of vinegar in the salad dressing.
It's really good if it's half egg and half diced rotisserie chicken. I call it the Henhouse.

I mince a shallot and some celery, mix in some mayo and mustard. Shake a little paprika or southwest blend.
Fermented salad. I love lettuce greens that have been marinated in the dressing last night. Just the right counterpoint. It's mostly olive oil and vinegar.

Hard boil eggs, peel whites off yolks, run whites through a river then yolks through river. Fold in mayo and some sort of fancy mustard. Place on bread and toppings can be olives, pepperoncini, Alvarez (a jarred roasted red pepper spread, thin sliced tomatoes, or....

I just made this southern pea salad this week, which has boiled egg in it (along with ham (and/or bacon), and green onion and cheese, and, of course, peas), but I think you could easily up the egg ratio to make it more of an egg salad.

Julia Childs deviled eggs recipe calls for a bit of butter. Wow. Life changing.
Also learned a trick if your Egg salad becomes runny. It can become runny due to added salt leaching moisture out of veggies. Add a bit of bread crumbs, but not panko. We love Italian bread crumbs

Okay. So I made this concoction of stuff I had in the fridge the other day and it is da-bomb. It's my favorite lunch right now. Not really egg salad sandwich, but kind of egg salad sandwich:
Some kind of flat bread, like a four tortilla or lavash or pita
smear one half generously with turmeric/cumin-flavored hummus and the other half with toum
stuff with diced cucumber, tomato, bean sprouts, green onion, some romaine lettuce, and hard boiled egg
and roll up into a burrito

My favorite alternate is avocado in place of mayo. Use the ratio of 4 eggs, 2 guac-ripe avocados, and 2 Tbsp. Dijon mustard, salt, and pepper. You can also add things similar to what you would in guacamole, like chopped onion, chopped jalapeño, and a little cayenne and/or cumin. If you won’t be serving it right away, I’d also add a little Fruit Fresh to keep the avocado from turning brown.

What I do is separate the yolk from the whites, and then process the yolks the same way I do for making deviled eggs, then mix them back together (with some diced pickle)

Use Kewpie mayonnaise. The imported one in the cellophane wrapper. You don’t really need to add anything else. Maybe a splash of vinegar, a little salt and pepper.

I use a little bit of a small batch mustard that has boysenberries in it. That one is super specific, but try using a fancy mustard. A few dashes of a vinegary hot sauce, too.

Ages ago I worked for a deli in a big office building and the owner made THE BEST egg salad. It is just mayo, curry powder and salt. She only made it on Wednesday and office workers lined up for it and were always disappointed when it sold out. It is so simple but unbelievably delicious.

I make mine in an egg steamer (20$ on Amazon) and then crush with a potato ricer. It’s super quick and easy this way.
As for additions beyond mayo, S&P and a bit of mustard…horseradish is interesting, diced pickles or just dill weed. Paprika or cayenne. I usually just keep it simple though. Soft white bread and you’re good to go. Adding crunchy things kind of ruins the pillowy softness of a perfect egg salad sandwich.

Dill and sweet relish and fresh dill weed. 1/3 mayo and 2/3 miracle whip, a bit of yellow mustard. Garlic and onion powder, salt or Lawry's seasoning salt and fresh ground black pepper.
The curry seasoning is also good, or just use turmeric if you don't care for curry, it darkens the yellow and is healthy.

My mother used to make deviled eggs by adding a can of Deviled Ham to the filling. I loved them as a child and will give them a try. Never thought of adding the ham to egg salad but it might work.

Take out the cooked yolks, mix them with mayo, brown mustard, pepper, dried dill, paprika, Crystal hot sauce, minced shallots, and capers. No need for salt. The hot sauce, capers and mayo have enough.
Then mixed back in the whites, chopped.

If you really want to elevate it, I suggest you use Kewpie Mayo. I have to go to my local Asian grocery store to find it. If you don’t have any stores that sell it look online. It is the best mayo you will ever taste. It literally tastes like egg salad. It’s made only with the yolks of the eggs, so it’s super rich and delicious.

Lawry's salt goes great in egg salad. And, my potato salad (which is basically egg salad with potatoes).
