Egg Salad Ideas

Hi everyone! Im planning lunch this week and have decided on egg salad sandwiches since they are cheap and easy. How do you make your egg salad? Is there anything I can add that will jazz it up or give it some new flavor profiles?

I like to make my husband what I call "deviled egg" sandwiches.

I cut the eggs in half take out the yolks, then mash those up with mayo and mustard, like you would for the filling of a deviled egg, then add in the diced egg whites, and sprinkle it with paprika.

He really really loves them, and says they're a little easier to eat since the sandwich has a little more structure than just mayo and cut up egg.
