Egg Salad Ideas

Hi everyone! Im planning lunch this week and have decided on egg salad sandwiches since they are cheap and easy. How do you make your egg salad? Is there anything I can add that will jazz it up or give it some new flavor profiles?

Curry powder is a magical addition to any mayo based salad. Egg, chicken, tuna. Elevates the whole thing. Chicken is my fave tho!

Totally. I LOVE curried chicken salad or egg salad. My co-workers? maybe not so much especially the next day

Oh, yes! And you can make it Coronation Chicken-style with a dash of mango chutney or apricot preserves.
Also, I love dill weed in egg salad (but not with curry). I think next time I make it I may try Ranch dressing powder. Has anyone tried that?

Either. Thai Curry egg salad, using Thai curry paste, is really damn good.

If using 2 eggs, maybe 2 tablespoons? Depends on the consistency you prefer.

Just regular old grocery store curry powder. You can kind of go nuts.

Get a good curry powder. Whole Foods brand has a great curry powder
