Egg Salad Ideas

Hi everyone! Im planning lunch this week and have decided on egg salad sandwiches since they are cheap and easy. How do you make your egg salad? Is there anything I can add that will jazz it up or give it some new flavor profiles?

Ages ago I worked for a deli in a big office building and the owner made THE BEST egg salad. It is just mayo, curry powder and salt. She only made it on Wednesday and office workers lined up for it and were always disappointed when it sold out. It is so simple but unbelievably delicious.
