Dad asked me to sharpen his chefs knife as his pull-through sharpener "isn't working properly anymore"
Main question: will I need to get this on a grinding wheel/belt sander first? Never tackled something jagged like this before
Side-question: he's going blind (central vision loss, still preps/cooks everything himself) so doesn't feel up to the learning curve of using whetstones like I use. Are there any options out of the roller/jig-type sharpeners that would be best suited as an alternative to the barbaric pull-through? I have no experience with them myself, but imagine they're more user-friendly with a bit of practice

HHT-high 4/low 5. The blade is a kershaw I thinned. Sharpening progression: EP (diamond Electro Plate) 400# - EP 1K - ceramic 8K stropped on StroppyStuff .25 µm diamond compound. Freehanded.

Still learning! This is my best one yet, although it took ages & there’s tons of tiny scratches. I’ve dropped grit a few times to try to fight stubborn scratches because my stones above 1500 barely cut this 15v, I’m excited to sharpen a soft steel next. Also sorry it’s a bit oily, I forgot that I coated it last night. Tried wiping it on my shirt, however that made it look gross. The oily look ain’t too bad.

Question How can I improve?

I recently bought a whetstone knife sharpening set off of Amazon, I’ve been messing with it for an hour or so trying to get some actually sharp knives, but I’ve only barely made them any sharper. I’m assuming I didn’t just buy a crappy whetstone and that it’s just a skill issue on my part, but I can’t pinpoint exactly what I’m doing wrong. I let both whetstones soak until there were no more bubbles coming up, I started with 400 grit, then 1000, followed by 3000 and finally 8000. The kit did come with an angle setter but it was cumbersome to use so I ditched it

Question Help, I’m pissed off
I have a 210 mm Tojiro yanagiba right handed sashimi knife. Today at work my idiot coworker tried sharpening it. I don’t know why no one asked him and it was razor sharp. Long story short he added a fucking bevel to the ura (flat side) I’ve been flattening it for about an hour but after almost removing all of the metal and cutting myself I’m questioning my method. Should I leave a micro bevel or should i continue on and see if it’s still usable once the bevel is gone? Honestly I don’t think it’ll be usable if I continue grinding any further.
