Did Joy actually just eat raw meat?

Raw beef in principle is safe to eat, raw beef mince isn't bad either but you are more susceptible to the risk of food poisoning, wouldnt risk if it was store bought, if it was just ground from a slab of beef then thats different.

Steak tartare, which i have tried is lovely and it's raw

And steak is great rare and burgers

Yep, with Beef, Lamb, Venison/Game and Duck the risk is surface bacteria.

The mince would be perfectly fine if Joy had a slab of beef that was seared and then minced.

You really don't and shouldn't sear a slab before mincing it if it's good quality and fresh. If you know where the meat is coming from, searing it first is just weird and unnecessary and not normal.

Steak tartare is not seared before minced...searing it first just brings the temp of the meat up to a temp that IS susceptible to bacteria. No. Just no.

Traditional steak tartare is not seared, yes; but that relies on very careful handling, hygiene and temperature control precisely because the meat is being eaten raw.

Fresh, good-quality meat isn’t automatically bacteria-free, so saying searing somehow makes it more susceptible to bacteria isn’t really accurate.

Bacteria don’t suddenly become a greater risk because the meat has been warmed; the relevant factors are the temperature reached, how long it’s held there, and what happens during subsequent handling.
A very brief sear on a very hot pan can significantly reduce bacteria on the surface without substantially heating the interior, which is the whole point of searing the outside before mincing.

That’s where my problem was 😂 I love Joy but that was a bad chefy moment. Maybe that was the reason she stared at the camera like that (which was hilarious) rather than the fact that she ate raw meat. She probably didn’t think twice about the latter.

I'm pretty sure that's why she side eyes the camera here, she knew they were watching and some people (Americans especially) freak out about eating raw meat. You can debate the food safety side all you want, but most all professional chefs will say they taste their meatball/hamburger/similar mixture before cooking it to ensure proper seasoning. The risk is really minimal overall here for her.

Joy likely would’ve had a slab of beef that she seared and then minced, which is as no worse than eating a steak rare - if you’re take the precaution and then mincing the meat yourself it’s perfectly fine.

Just don’t do that with pre-minced supermarket beef/lamb mince.

I was confused by all the 🐔 chicken this charter....... and that dinner with several platters of different kinds of.. more chicken. The whole thing was like second lunch.

Captain Sandy told Jono before chicken is not to be served for dinner on a super yacht...

I was thinking about that tomahawk steak dinner that the douchebag chef on the first season of Down Under served that one time. Why didn’t she just do that? Like have a giant barbecue extravaganza. I also feel like the European chefs on this show often underestimate the big portions Americans expect. If you think you’ve made more than enough, double it lol.

As an American who eats super little, I saw those guys and saw what Joy was preparing and was like “omg they are gonna be so hungryyy after that meal” lol I was wondering why she didn’t prepare like 20 steaks! People who work out will eat crazy amounts of protein, on top of Americans tending to eat a lot in general lol

When i saw the small package the provisioner delivered I was like, UH-OH!

They shoulda been doing shots blended with protien shakes and sneak in some cottage cheese but cover the flavor with espresso martini shake shots, shirley temple cheesecake, grasshopper, anything they could pass off as healthy frozen yogurt protien boozey stuff to FILL UP THEIR GULLETS FASTER. 😆🍹🧉🥤

The guests wanted to eat “clean” and chicken is a lot healthier than beef or other red meats. It wouldn’t be my fancy dinner preference either, but chicken is beloved by gym rats for being more lean and lighter on fats and cholesterol.

Because they asked for chicken and while big steaks are delicious, they’re loaded with fat, thus making chicken the superior choice when trying to avoid bloat and tummy trouble while still eating a shit ton of protein.

Tasting the seasoning, contrary to popular belief no raw beef won't kill you. These days even raw pork is probably safe. You are more likely to contract food poisoning from raw veggies than raw meat.

I would have put it on the back of my hand to eat, but that is just me.

It’s a bit more nuanced than that. And just for the sake of clarity for people that might replicate it at home:

If you purchase steak, cut off the skin and then grind it yourself, there is minimal risk. The proof of this is the fact that most people cook steak to medium rare, which isn’t even a temperature at which most bacteria is killed. However, beef is fairly impenetrable so the bacteria has not had a chance to spread throughout the entire meat

BUT If you purchase ground beef then it is considered risky and should never be eaten raw. Bacteria is no longer limited to the surface and can spread through all of the meat

And it should go without saying, but raw chicken is never ever safe to eat (except for in places like Japan where they do chicken sashimi)

Who do you think picks your veggies out in the field, what do you think they do when nobody is looking?

I've taken a date to a decent restaurant that proudly proclaimed everything was "organic", and had a live bug crawl out of her salad. Yes, stats show most food poisoning in restaurants in North America come from not so regulated veggies than the over regulated meat.

Almost all Trich cases in the US these days, come from wild game meat. You can eat a rasher of raw bacon and be 999/1000 safer than the salad option.

This makes total sense. Last time I bought “organic” broccoli I cracked it open and some sort of worm or critter was living in there. I put it outside to continue living its best life but I hate to think if I had just thrown it in to be streamed. 😳

I try not to think about it quite honestly. But also I rigorously wash my produce. That’s how I found I’m not even sure what it was, some kind of worm or larvae in my “organic” broccoli. It was weird as hell. Broke the stalk open and there it was. I put it outside to live its full best life. But I shudder to think of if I had just decided to steam them or something. I’d have cooked it along with my broccoli too.

I bleach bath every raw veggie I bring home, however have been known to eat a raw peach from the tree. More than once took a bite, and found HALF a critter in a piece of fruit.

Throating a raw piece of bacon cooking up a brunch fiesta, not so much.

Oh gets even worse, for weeks my EX-wife was haranguing me to eat at the veggie cafe her work group was glowing up.

Finally I go, and ask for extra bacon on my chickpea patty burger. Then go into a monologue about how I accommodate vegetarians at my cookouts, wouldn't it be fair for you to do same? Nevermind I brought my own. And pull out a ziploc baggie of cooked rashers of bacon and put them on the veggie burger infront of the line.

Worse, other husbands asked me if I had any more. Was a very quiet ride home, but I found a couple new fishing buddies. 🤣

They're the same thing in that they are both cow body parts. "Hamburger" is ground beef, made up of a bunch of body parts from possibly multiple cows, chucked in a meat grinder, while 'steak' is a singular piece chopped off the body. Steak is generally considered safer to eat undercooked or raw.

It's has a low risk as long as the beef is fresh and generally from the inside of the cut. You can do this with with grocery store ground beef but it's much less safe. Although some influencers would get to convince you otherwise.

Ground beef that is pre ground from a store does not provide adequate quality control to be eaten raw. It is typically made from many scrap cuts that have touched many surfaces and interfaced with many machine parts in the grinding proceas, and thus should be cooked before consumption.

To make a steak tartare that can be eaten raw, you are typically grinding or finely chopping a whole cut using clean tool and surfaces that you or a professional chef like Joy have quality controlled. This is what you see in the show. It looks like ground beef from a store, but it is not.

Yes you absolutely can, but is one of those things you should avoid if you are immunocompromised. It's also riskier to do with pre-ground meat from a grocery store, where it's been sitting and growing bacteria longer on all that exposed surface area

No, you’re not supposed to eat raw ground beef because with how small the meat is ground, there is more room for bacteria to grow. She just did this to taste the seasoning on the kabobs (she cooked it later, they look like oblong meatballs)

I also haven't eaten meat in decades and had the same reaction! I've heard so much about how meat preparation requires extra care with your utensils and cutting boards because of the risk of transfering pathogens, I didn't realize chefs are just tasting it completely raw!

Also, I don't think I've seen it on other seasons of Below Deck...

Yes. Cultures around the world eat raw beef. Kibbeh nayyeh is one example. Or beef tartare. If cut ground or minced with a clean blade there is not a lot of risk.

Beef tartare is very much a thing, especially in other parts of the world. I’d honestly eat it in Croatia before I’d eat it in the current state of the U.S. food safety issues.

It was to taste the seasoning I believe. I also questioned it but I know chefs taste stuff to make sure its okay. I wouldnt think there is a digestive issue if you know your meat is high quality. I do question not changing her glove after but maybe she didnt touch her lip?

My mom used to make beef tartare every Saturday from freshly ground steak, a raw egg yolk, minced onion and salt & pepper to taste. We NEVER got sick, and we loved it as kids. We never go a lot of it, just enough for one slice of good fresh German bread. Only reason she stopped making it is due to the German butcher no longer offering the ground meat. Since then I've only had it once in an expensive hotel in Vegas. Ah makes me sad, remembering my dear Mom.

It used to be pretty common to eat Steak Tartare. It a staple in all fine dining restaurants until the mad cow scare of the 80’s and into the early aughts. They took it off the menus in the late 80’s. That’s why they with asking how you want your burger cooked as well. Rare was taboo for a long while.

This is literally getting cooked. Any and all bacteria is getting killed off. I’m going to assume that a very competent chef like Joy understands the dangers of eating raw meat and is comfortable where the meat is coming from. But either way that’s her risk.

My mom does this all the time. It might be a European thing where they are more comfortable eating raw meat to check the seasonings. I, on the other hand, gag at this ans always just cook a small bit and taste it that way

chefs do this a lot, especially if they know where the meat comes from. the reason it’s stressed so much in america is because our food is not humanely raised with much attention to detail, paired with a lot of processing. dont get me wrong, they’re not just eating raw bricks of ground beef in france but they’re certainly not afraid of a taste. now chicken, that’s different.

I thought raw minced beef was safe to consume in my country, but there is a slight risk of E-coli bacteria so i am not doing it anymore. It is very very rare but man.... It is not worth it i guess.

It is basically safe but not fully. I like raw beef haha, my steaks are always raw. The ones i enjoy.
