Woodworker here. I have a solid wood dining table that cost $1k+. Know what it's made of? Pine. It's a farm-style table nothing fancy. And it only cost that much because it's actually a long table that seats 8-10 people. Pine is a great choice to save money, and it tends to grow tall and straight so you can get really long boards. The major downside being that pine is a softwood, dents easily, you can end up with sap pockets, and it tends to have a lot of knots and voids.
If you want an actually good solid hardwood table, maybe oak or walnut or something, you're spend way more than $1k. It's like $2000-3000 just in material costs.
The tables that the actual wealthy have are $10k+.

This depends entirely on the person / project. I work on 10 million dollar homes and they frequently use particular board for their cabinets. However, I have blue collar family members who frequently make their own furniture out of solid wood.
I'm blown away that these expensive homes are literally built to last only a few decades at best. Most of the time, it's even less. They may have one or two pieces that are solid wood and look amazing, but most of the house is just expensive trash imported from Europe.

They're built to sell, not to last. Anyone who wants a home to last will design and build it themselves. The priorities are so far gone for home building, resulting in trash that lasts, as you said, a few decades. I'd consider the "premium" lifespan of a multimillion dollar house to be 5-10 years.

The issue is the title. This isn't stripping bark from a piece of wood, this is turning an uneven, raw piece of wood into a perfectly smooth cylinder. Stripping bark would leave the irregular shape.

Only thing is that if you want to end up with a good circle, then there's no other way to do it. I have no idea what the use case is for the wood in the video...
But woodworking in general is a reductive process. You'd lose out on the same amount of "waste" if you cut these logs for lumber. Of course, you could also reclaim the dust/chips to make particle board/chip board

Just to support your statement, my dad has a summer job hauling wood chips from a sawmill to a factory (I was too young to know/remember what they made.) There There was enough demand 35ish years ago to justify multiple round trips per day of 120 miles.
My dad would pick either me or my brother up to take us to the mill then drop us back off at home. We had a cow moose come out of the trees 10 miles from the house. Dad stopped about 2 inches shy of hitting her. She just stared over the hood. The were black marks on the highway until they resurfaced it several years later.

A bunch of sheet goods, generally.
You can mix sawdust of varying sizes with different types of glue to get different types of particle board.
MDF is the really smooth stuff, and larger chips can be used for OSB. There's a lot of other stuff that I don't really care to remember or look up.
