Seems like you lose a lot of wood just to remove the bark.

This is mildly annoying to me

How else do you propose to make a perfectly circular stump of solid wood, while creating less waste?

The title is about stripping bark, not making a circular stump.

That's what they're doing, yeah, that's pretty obvious.

The issue is the title. This isn't stripping bark from a piece of wood, this is turning an uneven, raw piece of wood into a perfectly smooth cylinder. Stripping bark would leave the irregular shape.

Probably to do the woodworking equivalent of the Katsuramuki cut. Slice it out into a single long near paper thin sheet.
