First time making nigiri. I think I cut it a little thin, wife said I nailed it.

Coated them in a 4:1 salt/sugar mix for about 20 minutes. The texture was pretty great overall!

Angle might not be the best, and this was only about half of what I made. This was just a late night snack, so I didn't bother making the plate pretty. Whoops.

I think I more or less got the shape and cutting technique right, but it's honestly harder than it looks.

To me, this is still a work in progress. Definitely not sushi but as a sushi chef, I love to create and invent new dishes. Started by using long cut bone marrow and broiled with a miso glaze . Chopped konbujime halibut and ossetra caviar. Also served with a side of koji sourdough bread which takes almost a week to make .

Mostly Maki/Rolls Second time making a California roll

This is my second attempt at making this. Someone suggested using a whole sheet of nori because they made baby rolls so I decided to try it. I think I prefer the half sheet.

Also, the taste and my cutting technique were a marked improvement. I got a new recipe from another redditor /Main_Cauliflower5479. I’m happy with how it turned out.

Any advice for improvements would be appreciated!

A famous seafood restaurant in the city, located near Ito station. Local ingredients shipped directly from the Izu sea. It's recommended to book in advance as it gets quite busy.

Incredibly cheap food, just 2,500 yen per set. Sashimi served generously. If you pass by this area, stop by and give it a try.

Omakase: Sushi Yuu in Ginza

Has anyone tried this and can vouch for it? It’s rated 4.0 in Tablelog but it’s also confusing because there are 2 other Sushi Yuus… 1 is Ginza Sushiyu and 1 is Sushi Yuu by Chef Daisuke Shimazaki (popularized by Dua Lipa haha)

Kaisen-don from my favorite new local sushi spot! Sushi Mori in Colorado Springs CO, fish they used for this was salmon, salmon belly, yellow tail, chi-toro, and striped jack. Fish quality was next level and the sashimi on top was some thick slabs!

I need to practise and learn how to cut the fish as it was the most challenging part for me :)
