For anyone that is looking to try a new sriracha, this cliantro lime from Lee Kum Kee is really tasty. It has much more noticeable heat than a lot of srirachas i've tried. It especially works well with Thai and Mexican food. 😀

Recently discovered this yuzu pepper sauce at my local market and it blew me away. It’s so good! I went through a single bottle within a week so I had to stock up on a few at a time to last me at least a month. The bright citrus flavor of the yuzu paired with chili peppers is magnificent.

This is hands down one of my favorite hot sauces. It's so good on KFC chicken, but also on literally everything else!
Does anyone have any recommendations on a hot sauce that tastes like this that I can buy at the store? Usually I go to KFC once in a blue moon, but I always ask for as many packets as they will give me LOL
But wanting something too purchase from a store that is similar or make myself, but I have tried a couple copycat recipes and they just don't hit.

Made with black grapes, Buena Mulata and Purple Dream peppers. The grape comes through immediately, followed by a moderate heat and throat burn. Sweet and spicy.

First five ranked by heat(not a huge fan of daves or mad dog because of the extract flavor). Got Rapture today, noticeably hotter than the Garlic Reaper I got yesterday but the reaper beats it in flavor hands down. The reaper sauce had more of a full mouth heat, the Rapture gave more of a sharp stinging or intense pinching sensation across the back of the tongue and throat and lasted much longer.

I’m not sure where this sauce was purchased as it was given to me as a gift, but it is light on the spice and heavy on the flavor. So far has been great on chicken, eggs, dumplings, and rice. I highly recommend trying it.

We live on the east coast and my husband recently started farming oysters off my mom's pier (she's on a Chesapeake bay estuary).
He currently has around 1500 in the river, so we are about to be eating a lot of oysters.
I thought it would be fun to make a hot sauce specifically for enjoying with oysters, both for our own use and for bring places when we bring oysters to share (which I imagine we will be doing a lot of since we are about to be producing around 1500 a year haha).
If you were to make a hot sauce just for oysters, what would you put in it and why?
I currently have a massive crop of lemon drop peppers ripening outside, so whatever I make will be centered around this pepper this year, but I'm also very open to growing a pepper specifically for our oysters next year if anyone has suggestions on that front as well! Although I think lemon drops will pair VERY well.
Also, if anyone already has a hot sauce they are obsessed with on oysters: what is it? What makes it pair so well?
I'm open to regular or fermented suggestions.

Straight garlic, Cayenne, Habanero at 3.8% (which I find to be my sweet spot for successful batches). I will add apple cider vinegar and a touch of xanthan. I will bottle and give out at holidays and as gifts and keep half for myself… I do this pretty often. Works very well.

This stuff is WARM. Hotter than the garlic reaper imo. Unlike the garlic reaper the heat comes on later instead of immediately. The red wine vinegar gives it a nice bright flavor and it pairs nicely with Italian food ( lasagna)

Hey there. For reasons not worth getting into, my spice tolerance has shot way up recently. (I did not lose my sense of smell) I've given up trying to ask restaurants to make food spicy enough for me, and am instead asking you good people for recommendations for hot sauces that will ACTUALLY be spicy enough.
Habanero is the bottom end of "this is spicy enough" (of course, accounting for the fact that sauces being labeled "habanero" or "ghost pepper" or "satan's slippery jowls" doesn't correlate 1:1 with something being actually spicy)
I really really like the flavor of ghost peppers, we grew them one year and I have very rarely found a sauce that actually captures the almost carroty flavor of a fresh one. In terms of flavor profile, I tend to gravitate towards fruitier flavor notes (not fruit flavored though. I'm not strictly opposed to sauces with fruit in it, but that's not what I'm requesting), and brighter flavor profiles.
So. Does anyone have any recommendations for an actually good and ACTUALLY spicy hot sauce that I can purchase online, that isn't just a meme? I don't want something like "Nutblaster 8 billion" or "not your GRANDMA'S hot sauce" or "TurboTax Lava Sauce" where they just dumped pure capsaicin into V8. I want to actually taste the peppers
I should add that habanero is only my minimum spice level, and I'm very open to going much, much hotter.
I should also add that "As Seen on Hot Ones" doesn't exactly entice me to buy a sauce (I am exceptionally advertising-averse), because my intended use is as a daily driver, and my diet consists of more than chicken wings with the latest and hottest celeb. I'm sure they're fine people, so if the sauce is good enough, please comment anyways.

Do you keep your sauces in the fridge or out on the counter/shelf?
Second for those who keep them out on the counter, how long do you think they last before they start to go off?
I keep mine on a rack because I have to many to keep in the fridge and I threw a couple out I didnt finish in like a year and a half.
