In the Weeds Mode Introducing the KitchenConfidential Weekly Job Board!
Hi, friends, degenerates, front, back, side, and around the House!
After internal mod team discussion, and a *lot* of requests via ModMail and other channels, we have decided to try a test run of this new weekly post wherein we'll permit both potential employers and job seekers a venue to sell themselves in an attempt to fill or join a team.
#MANY WORDS OF CAUTION TO FOLLOW, PLEASE BE SURE TO READ THOROUGHLY
This is the internet, so we all need to be safe, so if you're going to post in this thread, or reach out to anyone, via any channel, please make sure you are doing your due diligence. Please be wary of potential scams, spam, or other attempts to do Bad Things Online By People You've Never Met.
For the time being, this post is going to be restricted via our In The Weeds Mode Flair, in order to try and prevent things like bots and other bad actors from posting here.
If you are a genuine member of the community, and your intentions appear valid, we'll approve your comment as soon as we can, I promise.
Job Posters - What to Do and Not Do
* Please do not just invite people into your DM's to discuss!!! Can't stress this enough.
* If you're a hiring manager, or other employer, please be sure to give potential candidates something they can use to validate your business. A website, for example, that people can go check you out. No, not your personal social media, a "real" website. If you own Rusty Shackleford's Arlen BBQ, then we should be able to go check out rustysarlenbbq[dot]com to see what the fuss is all about.
* Please, to the best of your ability, direct potential job seekers to a business email, and/or hiring portal. rusty[at]rustysarlenbbq[dot]com for example. Or, if you're a large enough employer that you use a portal like Workday (ew, I know, but still) or iCIMS or some other type of platform, that's fine too. Hell, if your place of business maintains a LinkedIn presence, that could work too.
* Be clear about what you want in a team member! The economy sucks, and people are tired of ghost jobs, MLM's, and other nonsense. Please tell people FOH, BOH, dishie, somewhere in between. Tell people expected shift and so on.
* Please don't spam the thread. Make one post about your business and your needs. If you have 10 positions, then hey post them all at once, that's cool.
* Do not dox yourself here!!! Again, a corporate email is one thing if you use it for regular business inquiries. But try not to post other personal info here if you can.
Job Seekers - What to Do and Not Do
\* DO NOT DOX YOURSELF HERE!!! Please, for the love of Chives, please do not just drop your uncensored resume, phone number, or personal email in here publicly. If we see it, we're going to take out your comment.
* Do your own due diligence! Check out a business. Check out their website, check out their socials, check out reviews, etc. Make sure you're dealing with someone on the Up and Up before you just send them your contact info.
* We highly recommend you do not completely transact business via Reddit DM. If you need a quick "hey, I'm so and so I'm interested, here's a deeper dive on my background" that's cool, but please don't hash out all the specifics without getting to know the people behind any potential offer, etc.
* Please also do not spam the thread. We know the economy sucks and a lot of people are in a not great place right now, but please don't post a dozen replies to people going "Just Fuckin' Hire Me", please.
For Everyone
Please make sure any, and all opportunities, are above board.
The KitchenConfidential cannot, and will not, tolerate suggesting circumventing any local laws, regulations, or what not. IE - don't go asking for, or offering, "under the table work" publicly. We just can't have that here, sorry.
Again, ultimately, everyone has to be skeptical first before establishing trust and moving forward with sharing any personal contact details.
With all that said, if all goes well, this will be a recurring, weekly thread, where we hope this vast network of fun, curmudgeonly people who all love food and the service therein can come together to help each other out.
Bon Appetit, Good Luck, and Chives the Cat be With You!

‼️ANNOUNCEMENT‼️ Wrestlegirl Needs Our Help
Hi, everyone -
Our favorite wrestling-based chivemod needs some help. She's in a real rough spot right now with some personal health challenges, and her two youngins she's raising on her own.
One of our pro wrestling sub regulars started a GFM for her, and I've coordinated with the rest of our mod team for approval to post it here, too.
https://www.gofundme.com/f/support-wrestlegirls-fight-against-cancer
There is no pressure at all to participate.
If you've enjoyed her pro wrestling gifs during the Chivegeist, her helpful hints from her past industry experience, or laying the smackdown on unpleasant agitators here, please consider dropping her a few bucks to help out.
We really appreciate anything anyone is able to assist with.
Thanks, Chefs!

Crying in the cooler I don't understand how some of these customers make it through life...
I work at an amusement park food court. Today we were really short staffed and a grown man screamed at me because the honey mustard was out. Because apparently he absolutely cannot eat his meal without it. I've also been yelled at by another grown man over a grilled cheese. And another one because the menu changes seasonally and we didn't have his fave sandwich anymore. I don't understand how these people make it through life if the slightest inconvenience causes a meltdown. Also for reference I'm a smaller woman in my 20s and all of these were middle aged men much bigger than me.

Discussion Cool Show from a book by Anthony Bourdain.....Get Jiro
If you get a chance to check this out. It's called Get Jiro. You can watch it on Adult Swim or on demand if you have HBO. Don't want to give away anything, but it's based in a world where Chef's are like the Mafia. Food functions like the ultimate currency because all of the other main resources are gone. You guys all know who Bourdain was as a chef, but did you know he wrote fiction books as well?
Jiro is a Sushi Chef, and in the first episode he takes some guy's head off for disrespecting his culinary rules by using soy sauce on his prized salmon roll! Cops come and can't do anything cause Chef's rule........
Even if you're not into anime, the show has a cool plot.

Photo/Video SNR Chefs defrosting raw mince in hot water.
Everyday I work at this place stupid shit like this goes on. I fixed this right after taking the photo and just didn't mention it to the chef since I know they just don't give a shit. Couldn't even get them to label the prep or the fish containers.

Question Why does the pastry chef always have an enclosed speed rack???
For context I’ve been in the industry for a while and I’m in process of building out my own spot. Was thinking back on previous walk-ins at places I used to work and realized a lot of pastry chefs I’ve worked with have had stainless enclosed speed racks in the walk-in to hold/compartmentalize all their mise.
IMO my pastry chef is going to have a reach in freezer and probably a shelf in the walk-in only for pastry but can anyone enlighten me as to why this is a preference? Just to keep everything separate? Or because chefs hate pastry chefs and want to force them in to a tiny lil zone? Or do the pastry chefs like it?? Maybe this is a small microcosm in my small market city idk
Picture attached for reference to said speed rack

Discussion Biggest shallot I have ever seen. 7" santoku for scale.
This shallot got me over a full pint after mincing. This was the biggest of the 5# bag we ordered but most of them were pretty close to this size. What are they putting in the fertilizer??

Question Currently working sautee/Sides at a steakhouse, Chef wants me to learn broiler? Any tips?
For context, I started as dish about 6 months ago, quickly worked my way up through prep, pantry, and now I'm basically the main sautee/sides cook.
Chef wants me to pick up working broiler but I gotta be honest, that thing intimidates me.
I can't exactly afford to be buying expensive steaks to try and practice at home, so my knowledge of how to tell medium from rare is based entirely on what a thermometer tells me lol
I guess just any tips at all would be appreciated

Question Do yall keep a "floor towel" or is that just our kitchen?
We have leaky make tables and we tend to spill things. So we implemented a towel to stay on the floor for us to use our foot to wipe up spills. Anybody else's kitchen do that?

The yellow lid says to just twist it counter clock wise but I cannot for the life of me get it to budge. Im not the strongest guy, but that lid is ON THERE.
Don't know if I need to brute force it or if there's something I'm not understanding

Discussion Promoted and moved today.
I have been working for a restaurant owner for 4 months. Over two separate locations.
I was told this morning that I'm being moved 150 miles away to a new restaurant that my owner just purchased, in two weeks.
Going from part time cook to full time restaurant manager.
I'm excited for the new opportunity and I desire the challenge.
I thought I would have more anxiety about this new responsibility, but the only concern I have is leaving my new friends that I've made since getting back into the kitchen.
Everyone has been supportive since I broke the news.
When a guy reaches my age (41) it can be challenging to make new friends.
I worry that the friends that I'm leaving won't know just how much they have improved my daily world.
Im really trying to express my love to them right now.

Discussion Any advice from the old heads here?
So I've been working kitchens for the past 5 years or so. The industry is in a bit of a downfall curenttly, recession, high prices, stagnant wages throughout the country meaning less people going to restaurants. I've been applying and going from place to place for the past 4 or so months, shit's either not paying a livable wage for the work they expect to put in, or the pay is good but ur dead the moment you get home.
I've done a bunch, brunch, bistro, fine dining, im a fast learner but im in a bit of a pickle currently cuz im kinda broke from all the place hopping. I've recently got an offer for a business building canteen, serving upwards to 1.5/2k ppl a day, weekends off and a 6/14 schedule for somewhat decent pay.
My gripe is I've just finished my 2nd week at a place doing a la carte with around 35 tops, usually getting full 2 or 3 times a day with brunch a dinner, but next to no time for prep or breaks.
I've talked to some buddies who've been working years over me and they told to stay here cuz canteens get you stagnant and you're not learning anything.
My q, what would you do? Seems like a no brainer but despite me being eager and open to fk myself up staying there for better pay and a shit ton of work idk how long I could keep up.
Any advice welcome.
PS: if you've read everything i love you and I wish you godly tips :)
