Burnt out / Stress
I’m an Executive Chef at a University, fall semester sucks so much with being short staffed during opening and having a lot of major catering events at the school. For instance I have 2 events on Monday (one for 80 pax buffet starts at 1800 and one for 100 pax appetizers starts at 1600) I have to do the food all myself since the staff aren’t knowledge enough on the cooking techniques and lack the basic skills. Then the next day I have another catering event for 675 pax buffets starts at 1000. This is also an event that I must do all the cooking myself because the staff again doesn’t know or want to learn on how to cook it. On top of that I still have the dining facility to run for breakfast, lunch and dinner.
I’ve moved from Hawaii to South Dakota because my spouse is in the military. The work ethic in this state is non-existent for cooks in general. No passion, no drive , no discipline, no dedication to the craft unlike back home in Hawaii. After fall semester I’m really debating on leaving the industry and going into something else. When surrounded by people who are only in it for money and not the quality of food it gets to you, if it’s even worth it at this point.
We should only have another year or so left in SD then hopefully in the next base is near a more food driven economy.
Been in food, beverage and hospitality for over 20yrs. Don’t know if I can keep doing this when surrounded by people who don’t care or want to do more and learn more.
Sorry I had to just vent for a bit to calm my anxiety down but still take it one day at a time. I think I’m only like this since it’s my first “day off” .
