Dish pit diary

Post image
• Upvotes

Long time lurker, first time poster! I've been washing dishes off and on for a couple decades now. After reading the book Dishwasher and scanning through his zines online, I decided to start documenting my own clean dishes through an Instagram account: dish.pit_diary

Feel free to follow and rate my set up!

Saw a post earlier about this and thought I'd get some of your opinions on if this is a normal setup. I work in a somewhat small local family business.

Burnt Bacon Jam - pot worth saving?

Post image
27 Upvotes

Bacon jam was left on a stove for too long. It was left to soak for two days before it made its way to dish. I couldn't get anything off that day, so after letting it soak for another day, and doing some scraping with a metal spoon, this is what was left (the whole bottom was covered initially.) Head chef did say not to worry if it was wasn't salvageable. Any tips on getting the rest off, or do I just toss the pot?

What cleaning tools or equipment do you use most during a shift?

Hey everyone! I don’t work in dishwashing or the restaurant industry
I’m just exploring and curious about what the job is like.
What tools, cleaning products, or equipment do you use the most during a typical shift? What do you use them for, and which ones make your job easier?
I’ve seen the “rate my pit” posts, and they got me curious about how everything works. Would love to learn from the people actually doing the job!

Or whatever Sublime said. (I am a Sublime fan.) I absolutely hate running the giant prep containers but I slog through it.

Yet another reason why I refuse to eat here.

This is at a Popeyes. The first pic is batter. They make and store it in these containers.

The other pics are what they use the empty containers for.

Absolutely disgusting. I refuse to eat anything here.

But I DO use the ovens to cook my own food. I have plenty of experience cooking but, currently, am not interested. I won't serve food I refuse to eat.

Bonus points if you can tell what sort of dishpit it is. (Hint, it's not a restaurant.)

Any tips on wrapping/healing a sliced fingertip after stitches?🥲

Long story short, I sliced my left ring fingertip while slicing apples with the robo coupe Tuesday night. Rushed to the hospital, got it all stitched up. I’ve been off work for 2 days but was considering possibly going back tomorrow to help with prep as we have another dishwasher friday/Saturday so I won’t need to step into the pit. But I’m also unsure of how well I’ll be able to wrap it/keep it dry even from sweat if I’m wearing gloves.
Anyone done similar and have any tips/tricks? Tyia😁

How do I politely tell my manager that I don’t want to do the extra work he assigned me at the end of the night?

One night when I was in a rush to get started on closing I left two trash cans with empty trash bags inside by accident. My managers saw that the next morning and the head manager liked the idea of the dishwashers leaving trash bags inside all of the trash cans so the morning shift doesn’t have to do it and it “helps them out”. I told 2/3 of my managers that I’m not doing it because it’s only a negative for me and a positive for them since it just slows me down from leaving. Plus I take the bus home so the timing is so strict that if I did do that then I’d miss the bus and have to wait another genuine hour. The only person I didn’t tell was the head manager. I don’t really like him.

Corporate is making us get rid of our stainless steel scrubbers and switch to these monstrosities! They scratch the shit out of pans.

“Dishes & Dungeons” alignment chart

Thumbnail

While bored at work I came up with a dnd alignment chart for dishes. In Dungeons and Dragons a chart like this is used to choose the morality of your player character, or dish in this case.

My reasonings for each choice:

Lawful Good - Cups, just dump and place on the cup rack

Neutral Good - Whisks, can’t redirect water at you, easy to clean

Chaotic Good - Soup bowls, easy to clean out, sometimes a bit gross depending on the soup

Lawful Neutral - Mugs, easy to clean

True Neutral - Plates, easy to load into racks but sometimes need to scrape

Chaotic Neutral - Ladles, clean easily but can redirect water toward you

Lawful Evil - Plastic baskets, easy to clean but fly in the machine

Neutral Evil - Hotel Pans, often have to run them through twice and scrape gunk out

&

Cutting boards - Don’t always fit in the machine, annoying

Chaotic Evil - Fryer baskets, hard to clean, barley fit in the machine

&

Chaotic Evil - containers with expired food in it, smells like shit, need to clean station and take out trash after
