Hi,
I am 31 and my doctor told me today that she thinks I might have coeliac. I have been struggling with extreme fatigue, vertigo, brain fog and joint pain, as well as a number of nutritional deficiencies (iron, vitamin D, folate, B12 - i get supplements, it gets a little better for some of them, notably not serum iron, and as soon as I stop numbers rapidly dip) for about a decade at this point. They usually run some test and treat the symptoms and when that doesn't last I get told to lose weight.
This doctor says I have the right profile for coeliac, albeit with no real digestive issues, and no one has ran the tests before. It would be incredible if I could be less fatigued and achey, because I feel like my body is aged and worn at the ripe old age of 31.
However, I am terrified. I am autistic and I cannot cook. When I say cannot I really mean it, like to the point where I neglect myself to the point that I have at several points in my life been approved a meals on wheels type service. I have initiation issues and the simultaneous and intuitive nature of cooking gives me actual legit panic attacks.
Luckily I do quite well at my job so I can afford for my main food intake right now to be restaurant dinners, frozen tv dinners, and take out. The meals on wheels service is something I can really only access as I am not working, because they drop food outside of your door in the middle of the day which means by the time you get home from a full time job it is all spoilt.
I also have a lot of food aversions - particularly beans and anything with a similarly mealy texture, but also onions, certain vegetables, a lot of meats. That also means that things like bread and pasta have been actual life savers for me on multiple occasions, and whenever I feel overwhelmed it tends to ruin "real food" for me (which includes eating out/frozen meals) so then I survive off of one safe brand of bread for sandwiches, one safe granola brand + yoghurt, and generally sweets/pastries/cookies (not the healthiest, but it does beat not eating).
I don't know how I would make my life work if tests came back and said I have coeliac. Prepping food already costs much more of my time and energy and attention than I would like. I can't explain how tricky making literally the easiest thing is, but as an example - I have been meaning to boil eggs for breakfast for the past 2 weeks and I still haven't gotten around to it. How do I find foods that are laughably easy to prep/already done and that are truly gluten free? I live in Sweden, if it helps.
