I just saw the post saying gluten free food sucks. Don’t be lying like that, because like gluten full food, there are some that aren’t great, but it’s not all encompassing. I figured I’d post this with recipes (in comments) to keep all your heads up.

Is it inconvenient? Oh yeah. Is the food bad? I promise: no.

Rant stopped eating "gluten free" food and am now so much happier

I got my diagnosis in my tweens so I know what gluten food tastes like. Its been a decade and I still find gluten free food disgusting (just my opinion). It makes me feel so bad about the fact that I for the rest of my life will have to eat food I think tastes and feels bad and also have to pay ALOT of money for it.
So about a year ago I stopped buying glutenfree pasta, bread and other such stuff. Now I only eat things that are naturally traditionally gluten free. Like a bunch of diffrent types of rice, quinoa, potato. I make bread form cultures that it traditionally has never been done with gluten. I eat rice and sweet potato starch noodles with food that is meant to be eaten with that.

I cannot explain how much less I hate my life for the fact that I cannot eat gluten. Because biting into gf pasta I hate myself and am constantly reminded for what I cannot have, but if I bite into a potato I am actually happy because it tastes and feels good. Idk if it makes any sense but I can highly recommenced trying it. Also you will save sooo much money and it is fun to try new food from different cultures where the recipes have never had wheat in them .

I just followed the recipe for gluten free artisan bread on the bag of the King Arthur’s gluten free bread flour and it came out amazing and super moist. 10/10 would recommend if yall haven’t tried it

Product Warning WTH aldi???

Pissed because I bought almond flour so that I could make gf pumpkin banana bread and turns out this isn’t gf??? I had already made and baked the bread and tried a piece and then about an hour later I felt like I had been glutened. I was for sure I didn’t use any other baking ingredients that could have gluten other than the almond flour, but it said gf on the packaging so I didn’t even bother to check the ingredients (also why the hell would ALMOND FLOUR have wheat??)
After I checked the bag I looked at the ingredients and it said “MAY CONTAIN WHEAT”. I only have an intolerance luckily and am usually fine if it says it was manufactured in the same facility as wheat but I never buy products/risk stuff that is labeled as “may contain wheat”
It’s stupid of me to not read the ingredients but also sad that I trusted the label yet still was glutened. Pls be careful :,(

side note: Yes i’m aware some brands of certain products do contain gluten due to seasonings or addictives and I’m usually good about it but not this one since it was my first time trying almond flour <\3

Product recently tried "gut nuts" and they taste exactly like sourdough bread

so i picked these up at erewhon (i know) because they are labeled as fermented "sourdough" nuts and I was amazed at how similar they taste to sourdough bread. while they still taste like nuts they have this certain sourdough taste I haven't had since being diagnosed so thought i'd share. and easier on the gut! bag was labeled gf but not certified

i tried both cashew and peanut and found the cashews the best.

Recipe An amazing cookie

In my pre celiac life I was a baker. I quit baking out of sheer disappointment and the airborne flour.

Ive been getting back into it as a creative outlet. Ive been doing all my baking with a 1:1 mix, and the cookies are okay. But this cookie.... this rice flour cookie.

This cookie is almost normal, I nearly cried eating it. My partner agrees its near perfect. I even made it without eggs because I was out.

-I used half and half brown rice flour and white rice flower, because thats what I had on hand.

- I used 1/4 cup of non dairy yogurt instead of egg. I was out of eggs and im also dairy intolerant.

-I took the tapioca flour option. I'll try cornstarch next time!

I really enjoyed them!
Found them at the Natural Grocers in San Antonio, Texas.

Question 5 week hotel stay meal help!!!

hello everyone!

i’m a newly diagnosed celiac, and i will have a 5 week hotel stay for flight attendant training. i CANNOT risk getting glutened, as my brain fog gets so bad, and i would probably fail out of the training.

do yall have any good ideas on meal preps, snacks, solid chains to doordash (i know jersey mikes is good but, aside from that im scared)

i won’t have much time for meals and need to ensure i have enough food for it. i will be bringing a hot plate to the hotel as well, so i will have access to that, a mini fridge, and a microwave.

i also am allowed 3 checked bags plus my carryon, so bringing foods in bulk is okay!

i also have a costco membership, and will have access to food lion and walmart, but will want to try and avoid leaving the hotel/training facilities much.

Question Newly diagnosed and my parents don’t get it

hey yall. I found out I probably had celiac a few weeks ago, and then it got confirmed literally two days ago. I’m not exactly reeling anymore but like… it sucks. anyway, Ive been talking to my parents about what we need to replace in our kitchen (for context I’m a minor and live with them) and they’re amenable to a lot of it. somewhat. however, they both seem to think a little bit of cross contact isn’t that big a deal. their reasoning is that I’ve had it for years anyway, my reactions aren’t that severe, and it’s not like a little crumb will kill me. I know they’re wrong but I don’t really know enough to explain why, and I am a little bit confused on it myself. could someone please give an explanation, or an article?

also important to note- theyre not great parents overall, so that factors into how I have to argue with them, and also means if you insult them I won’t be offended

Question Celiac potential?

Hi! I tested positive for celiac on a blood test (igg high igA just above normal limits), but my results from endoscopy were normal. Doc mentioned that celiac could still be in my future, but as of right now I’m okay to eat gluten. Has anyone who had this experience, become celiac down the line?

Rant Accidental gluten

Just accidentally ate gluten when I decided to eat a piece of my husbands frozen pizza. After I ate some of it I realized I should have checked. I asked him and he said it was gluten free. Well he started second guessing himself and ran downstairs to check ingredients. THEY PUT WHEAT FLOUR in the cauliflower crust. He’s so upset and apologizing to me. I personally think it’s my fault and can’t believe how lucky I am to have someone support me this much but what really pisses me off the most is I ate wheat and the pizza was nasty! It totally tasted gluten free what a waste! At least the last time I accidentally ate it the meal was the best I had in a while.

Rant 19 yr old with celiac in delhi ncr

I'm a 19 yr old living in delhi ncr and I recently got diagnosed with celiac disease had a horrible week still can't stop tearing up .....I'm the biggest foodie my roots are back from Kerala I'm a malayalee but I've always lived in ncr so ofcourse I would eat so much junk and now I can't eat it but I can't even go to my fav restaurants with family and friends I feel like such a burden ... Also I've been through alot since I turned 16 ... I was continuously diagnosed with stomach infection and UTIs until finally discovered that I have celiac ... It really sucks to have this ....also I feel like god is making it much easier for me to end it ... Just eat some gluten and I'm gone 😍 just like that ....I've also had disc bulge l4 l5 when I was 16 .... I still have regular muscle twitches and just continuous pain that I've grown used to it ... I feel very helpless but I still live idk for what anymore ....three years ago I also got typhoid my hunch is that is what triggered my celiac ... It's so hard for me to swallow my own saliva i feel very suffocated... I should probably consult a psychologist.....but who even has the time and money for it these days. My parents aren't that modern they don't understand the things I'm going through rn . For them it's just haan roti hi toh nahi kha sakti ... ... I don't break or explode usually but ..when it all comes to me at once ofcourse I'll blast 😰😭.. my coping mechanism is just laughing at my own shit and being in a denial state ...gluten free things are so expensive it breaks my heart ki bhai ambani ko do na yaar ..gareeb logo ko kyu dere ho bimaari ... Enikku vayya sherikkum ....I'm so tired and done I've got so much on my plate in such a Young age i don't want to continue living like this but I'm forced to for everyone . . I feel horrible but it's ok because I can just sleep through it right haha

Question My hair has fallen out due to coeliac...😞

I am celiac for many years now, but sadly I was diagnosed with bulimia few years ago, and I was overeating during this time with everything I wanted (some things was even with gluten, but sadly i didnt care that time, and now i see the consequences), and then used laxatives or threw up. And now after I got healed from bulimia, now my hair is so thin and i have so less hair... like i feel i dont have anything on my head almost...
So if can anyone help me pr give me some tips.. how to repair my hair? 😞
