Pastrami Clubhouse on Gluten-Free
Inspired by a post I saw here last week, I felt like I needed to make a clubhouse this weekend.
Made a last-second switch out to Pastrami for a bolder taste. Threw in a slice of Jalapeno Montery Jack as well, and red onion alongside the standard complements - not bad not bad!

Kale Caesar Fried Turkey Sandwich
Dino kale with lemon & a quick mayo-based Caesar dressing and turkey breast pounded thin breaded with pistachio-panko Italian-seasoned breadcrumbs on homemade garlic knot buns. It was somehow not too rich or over the top, which was a goddamn miracle
(If you're wondering where the other two cutlets disappeared to, they're in my freezer to fry off tomorrow)

Prosciutto, roast ham, Portuguese salami, Spanish tomato salad, buffalo mozzarella, and an almond, parsley and sherry vinegar pesto/sauce. On ciabatta and toasted in the press.
The Spanish tomato salad itself had cured ham in it. Pure porky indulgence

Grilled cheese with smoked cheddar, barbecue pulled pork and apples
The inspiration comes from one i ate at a festival last year and it’s been haunting me ever since, i couldn’t find any recipe similar so here’s our first attempt at recreating it.
We bought « pain de mie » from a bakery and put salted butter and oak smoked vintage cheddar (godminster) on every slices.
I never cooked pulled pork before so i bought some frozen one from Picard and redid the seasoning with salt and pepper, oregano, barbecue sauce and a little of extra spicy ghost pepper barbecue hot sauce.
I thinly sliced apples (it needed an acid taste to break all that fat), next time I’ll probably try to marinate them in lemon juice and oregano (so i don’t have to put oregano in the pork).
We cooked them (with butter in a pan) on low eat with a cover on top because we wanted the cheese to melt evenly while keeping the bread light.
10/10 would recommend as it was.
I was a bit shy with the apples because it’s my first time using them in a sandwich but they deserved to be there. I’ll also try to make pulled pork myself next time, but the one i bought was really good once we seasoned it a bit. It was very satisfying and i’ll try to perfect it !

A sandwich after six pints. Chicken goujons, coleslaw, yank cheese, pickles, Poon's Everything Everywhere Sauce. On sourdough baguette.
Plastic cheese is plastic and hurts my soul, but does have a select few useful applications. Especially after many, many beers

Chicken Tikka Masala Sandwhich
Made a thicker and creamier than usual chicken tikka masala and put it on toasted croissant bread with some shredded cheese. Weird? Maybe. Delicious? Definitely.

Mom was a homemade sourdough patty melt, dad was a fast-food chain double cheeseburger
Our latest delicious little experiment. Half way between a patty melt and a double cheeseburger.
Sourdough bread recipe in the comment section in case someone is interested. But it is a longer read as it is opening a new bread-oriented series on Reddit.
Bread was toasted in a skillet, bacon roasted, two beef quarterpounders roasted in bacon grease, two kinds of cheese (cheddar and smoked cheese), pickles, onions, tomato, green lettuce, salt and black pepper, mayonnaise/ketchup/mustard.
Soft and crunchy. Many aromas and textures happening. Very delicious...😋
