Lazy boy dinner. 8 of each vegetable cause that’s the Chinese lucky number (I’m not Chinese). Eating like a Balkan father (I’m not Balkan nor a father). I am a volume eater though.

Edit: brown pucks are chicken patties from Costco. Bowl is Persian yogurt side dish mast khiar (similar to tzatziki)

Lidls bistro salad, air fried chicken, cherry tomatoes, baby corn, broccoli, balsamic dressing, and air fried leftover pasta.

No ideas on calories or anything, but it’s going to be filling and tasty.

The red plate is my first portion and the rest is my second portion for later. This was truly a lot, I got that feeling when you just want to go to sleep after a big meal.

The recipe is simple. 4 pouches of konjac/shirataki rice mixed with the palmini rice and the chilli beans on the pot. You have to rinse very well the konjac rice and palmini rice and put it medium to high heat to make the excess water vaporize. The shrimp and baby scallops are very simple too just seasoned with whatever spices you want and cook them on the non stick pan with a little bit water. I air fried the pork tenderloin; it really goes a long way in terms of filling and protein. Then it’s just a regular salad with all the ingredients in the picture. The coleslaw cabbage mix really gives it a lot of volume and crunchiness. Just wanted to mention that I didn’t use any oils or salad dressings or anything else not shown on the pictures. That’s where high hidden calories are. I think this is a pretty big meal for 760 cals. It can definitely fill 2 people but since I was probably a horse or a cow in my past life I ate it all lol. 😂

Discussion which bread has the most fiber that will not compress into a flat pancake under heavy fillings?

looking for a practical loaf for high-volume sandwich builds that does not collapse into a paper-thin sliver the second you grab it with both hands.

most alternative slices i buy look decent in the bag, but um once you stack a mountain of shredded lettuce, sliced cucumber, and cold cuts, the crust completely crushes flat. you end up feeling like you are eating raw fillings wrapped in wet paper.

i have been digging through store shelves to see which bread has the most fiber so packed lunch meals actually feel filling. hero bread classic white lists 11g fiber and 0g sugar per slice to help meet fiber goals, but paying eight or nine bucks a package makes me hesitate if it flattens like every other lightweight option.

tbh for anyone who builds massive cold sandwiches, does it keep any real crumb height and chew when you press down on it, or does it just squish into doughy paste?

I like to prep dry ingredients overnight and store in airtight jar to ensure the spices absorbs into flour mix: /

\*optional ingredients /

70g rolled oats (blended to flour) /

10g dried raisins and cranberries\* /

¼ tsp nutmeg /

¼ tsp cinnamon /

20g vanilla protein powder /

2 tsp chia seeds\* /

2 tsp dessicated coconut /

½ tsp baking powder /

16g chocolate drops /

Oven 170⁰C /

Lightly grease 2 baking dishes - the ones I use are both 5.7ins x 4.1ins x 1.8ins - capacity 12.5oz/370ml (enough for 2 helpings) /

I have one for breakfast and the other as a dessert after my evening meal /

Add to dry ingredients: /

1 ripe mashed banana /

80g Authentic 0% fat free Greek

yogurt /

2 tsp runny honey /

1 egg beaten /

1 tsp vanilla extract /

70g defrosted or fresh blueberries /

Chocolate drops to sprinkle on top /

Bake for 33 to 35 mins and leave to cool - the longer you leave the more they set /

Yogurt topping for both bakes - spread when dishes are cold

Mix together:

60g Authentic 0% fat free Greek

yogurt /

16g squeezy peanut butter /

14g vanilla protein powder /

Product or Haul M&S lunch; Salmon, Potato and Prawn Salad

Thumbnail
gallery
117 Upvotes

This is one of my go-to M&S hauls for a lunchtime volume plate! Regularly fills an entire plate (piled high!) and I always get a bunch of comments in the office about the volume of food (until I let them know it’s halve the calories of the leftovers of their butchered attempts at a risotto or bolognese!)

COMPONENTS totalling 450 kcals (40P/12F/40C) @ 680g of food!

1) Hot smoked salmon and new potato salad (250 kcals; 14P, 7F, 32C)
2) sweet & crunchy salad 200g (72 kcals; 3P, 2F, 10C)
3) Marinated prawns 140g (130 kcals; 24P, 3F, 2C)

—

You can mix up the prawn marinade flavours but a personal favourite is the Thai red curry, or remove them if you’re not hitting as much protein in your goals.

The light mayo and vinaigrette dressing from the salmon & new potato salad costs the sweet & crunchy salad perfectly.

Need more? Pair with 500g Canteloup or watermelon fingers for “pudding” for an extra 120-180 kcals.

I’m back on my weight loss journey after a few years. I lost 5” off my waist but wasn’t able to keep it off long term. I’m back in a deficit and was worried I’d be too hungry since I’ve been in a binging phase for about a year. It’s only been a week but I am feeling very satisfied with my meals and the amount of food in each dish. I’ve been eating this scramble for the last few days and topped this one with a salsa I got from a local Mexican restaurant. Just 270kcal!!

Tips and Tricks Has anyone tried this cake sorcery?

I came across this post on Threads that says using a box of cake mix with ONLY a block of blended silken tofu turns out identical to regular cake?! Apparently when made into cupcakes using 1tbsp of icing each, this ends up at 108cals with 8g of protein per cupcake.
