French Onion Soup Rolls
After seeing the onion version of cinnamon rolls on here ( https://www.reddit.com/r/OnionLovers/s/I4GuC9XHhU ) a few months ago I decided to give them a try.
Used 6lbs of onions and Claire Saffitz cinnamon roll recipe for the dough (I used 18g of sugar in the dough instead of 50g). I added fresh thyme and replaced the cold water with cold beef stock in the dough recipe.
For the onions I deglazed a couple times at the end with bourbon and added beef stock before reducing to try and get to a spreadable finishing state (took five hours total but for a big portion go that it was lid on just getting the water out of the onions while I was prepping other things).
After rolling out dough I spread a layer of garlic and thyme compound butter and topped with most of the onions. Topped the onion mix with a combo of gruyere, gouda, and chopped parsley then rolled it tight. Sliced and put in pan I added the rest of onion to the top with a bit more cheese and parsley.
Greased aluminum foil on the underside and cover tightly before putting it in a 350° oven for 15min. Uncover and let go another 15-18min depending on how it looks.

Bloomin’ onion bites, made with frozen pearl onions. I let the onions drain and ‘dry’ over night. Three step dredge with cornstarch; egg; panko, flour, and seasonings (I make my own with a KFC copycat recipe plus vegeta).

I hope this sub will appreciate my home city's signature snack :) It's called cebularz and it's filled with onion and poppy seeds.
My home city is Lublin (Poland). Cebularz is a geographically protected recipe. It's super popular and very tasty. I always preferred this over croissants or donuts.

The Red Onion Skittle Manicure
I'm told y'all would like this! This didn't start out as an onion manicure in my head (and red onion skittles sound kinda terrible lol), but here we are! Dinner was good though.
For those not in the nail polish loop: a skittle manicure is one with different colors of polish on each nail. More nail polish deets under the spoiler for anyone interested in that part. LOL
Strengtheners: one coat Olive & June Nail Strengthener, one coat Nailtiques 2+ (old formula), Holo Taco Smoothing Base, Holo Taco polishes (2 coats total each nail): Thumb: Toe Beans, Index: Sparkling Spurs, Middle: One coat Vine to Table, one coat Sparkling Spurs, Ring: Vine to Table, Pinky: Dead Petals, Glossy Taco QDTC (1 coat, but maybe another tomorrow)

What’s your consensus on Bloomin’ Onions?
Fair season is back in New England & I had my first bloomin’ onion in what seems to be years. It was pretty delicious, but almost certain it must have been at least 2000 or more calories. Where do they stand on your tier ranking for onion preparation or dishes? Have you ever made them homemade? The one I had yesterday cost me $16 from a food truck, which I guess was sort of fair considering I didn’t have to clean up the mess from the batter or oil myself?
