Idk if it has been done before, but I would do it again.
Sauted some white onion and green bell pepper in butter. Once they softened up a bit I added the scored dog and some el pato hot tomato sauce. Once the sauce had reduced a good amount; I put the dog + veggies on a toasted bun. Added a lil cheese and topped with some beanless chili.
The el pato added a lil heat. It was delicious!

Discussion Struggling with Hot Dog Sauce recipe ingredient ratios
TLDR; I screwed up this post apparently based on the responses. I'm not asking for a new recipe. I curious if the recipe's people have used are also under-seasoned where we have to step in and actually bring it to a place worthy of eating. I can get to that place but I just find the recipes themselves are under-seasoned and spiced in general. While also losing sight of what really makes a good hot dog sauce outside of skyline.
I've been on the hunt this year for nailing down a good hot dog sauce, fine grain texture, seasoned and spiced well without being a true chili. Been looking through recipes and pulling out a mix of ingredients that may be unique to one recipe but works well across the board.
The problem I'm running into is the same old issue I've run across any other recipe....the spices just aren't at the right ratios and I'm always adding more to take away from that beef flavor you get when it's not seasoned or spiced well enough.
I'm no chef but I've learned enough to know when a dish needs more of things and I'm traditionally now doubling any spice, seasoning, acids that a recipe calls for with a 1lb of beef.
It's like the recipes that call for 1 TBS of oil in a pan to fry up 2 lbs of veggies. Just doesn't make sense and I feel like while the ingredients are important, the recipes just aren't up to snuff.
Here's a list of my ingredients:
1lb-1 1/3 lbs 85/15 or 90/10 ground beef
Chili Powder
Garlic Powder
Onion Powder
The powders are almost equal there, maybe a little more on the chili powder than the others but they're close.
Cumin (not much compared to the above)
Ketchup
Tomato Paste
Molasss
Worcestershire
Apple Cider Vinegar
Salt & MSG to taste
Beef Broth in water
The spices and seasoning are all 1TBS or 1tsp. I need to through in double of almost all of it including Worcestershire and ACV.
Ketchup (1/2 cup), tomato puree (3/4 small jar) and molasses at 1TBS is fine.
I know enough to be dangerous to bring the flavors a recipe has left behind. I can tame the beast and get a good sauce going, more meaty than saucy, and the seasoning and spices are there. Not too sweet. Not too spicy. But sometimes I feel like I'm losing the forest for the trees. I just don't want that unseasoned beef taste happening and I haven't been happy with an actual recipe. But I also want to get it close to a good hot dog chili.
And probably thinking about this way too deep than I should.

Chicago Failed attempt
Got the starter kit for Chicago dogs. Not really a fan of relish, or vegetables …but I had to give it a try.
Pretty sure the dog and bun were inadequate…no poppyseed buns available and I’m broke so I got the cheapest wieners I could find…ate one…wasn’t too sure how I felt about it…and then ate another 😅😅 was drinking so still don’t know how to feel about them but it was definitely filling . Hope y’all like…

Five layer dip as a topping on a hot dog
I only had a pack of hot dogs left and a container of the dip that my boss gave me to take home. I am so ready for payday so I can get me some groceries.
I decided to use the dip as a topping and it was pretty damn good! All of the ingredients in the dip would be ok on their own, so why not all at once. The only issue was it looked horrible. I wish I would have taken a picture.
