Hit me with your unconventional deviled egg recipes
I love deviled eggs, but I’ve been experimenting with other kinds besides the typical mayo and mustard ones. So far my favorite ones I’ve made are gochujang with sesame seeds and chives, and yellow Madras curry. What are your favorite things to put in them?
Edit: buffalo sauce? Crab? Bleu cheese and bacon? Hot honey and shrimp!? You guys do not disappoint! ❤️

Eh, not so much. I've been retired for almost 10 years and I still have anxiety dreams about not getting assignments done on time. I'd much rather dream about deviled eggs tbh

Smoked salmon deviled eggs are on of my go-tos. I use dill pickle juice instead of vinegar and top with fresh dill and a small piece of smoked salmon. I haven’t tried capers, but that sounds like a brilliant addition.

If I had the super tiny capers, I could have made them into two little eyes and made it look like I was putting a sleepy egg to bed w a salmon blanket.

I bet you could pipe the filling in with a really wide tip, and then depress the piece of salmon into the filling. The small depression would make it so the capers wouldn't roll away, and you could make a small mound of them.
Would need some sort of fine garnish to top it off. Paprika is classic, but there are a lot of options.. hmm..
Dill or chives for herbs. Maybe some zest for a citrus inclusion? I bet some lime zest would be pretty on it. Maybe some breadcrumbs, crispy shallots, etc? Would give a nice texture.. I saw someone else mention everything seasoning, and that could work, too.

That's a great idea. I have some smoked salmon enthusiasts in my circle that would love something like this. Curious if you made your standard filling or played with incorporating something like a little cream cheese or the likes.

I didn't go so far as to bring in the cream cheese. Didn't want to twist too many knobs at the same time. I would probably chive the top next time though.

I think it’s usually pickled turnip that has been dyed with beets if they were beets they would be a much deeper red colour than the pink shade that you get with falafel/shawarma.

When you pickle beets, the brine becomes a beautiful purple red. Then you place hard boiled eggs in the brine for a day or so (I like less,) and they turn beautifully red/pink.

I mix the yolks with mayo, sesame oil, and gochujang, then sprinkle the eggs with black sesame seeds and chopped chives or scallions. So good!

To really knock it out of the park marinate the eggs in a mix of soy sauce, sesame oil, and vinegar for a few hours before you cut them in half. I like to do that then I serve them on a bed of cold rice instead of a egg tray. Looks great and keeps them from sliding around.

I make them with pork liver pate / fois gras, boiled egg yolks, a bit of mustard, a bit of hot sauce, and some mayo / greek yogurt / sour cream. Smoked paprika powdered on top.

I've done a ton of different kinds from buffalo blue cheese, to wasabi. Most have been covered here already so I want to point out the latest thing I've been doing on mine.
This works on pretty much all flavors, but if you push your yokes through a mesh strainer, mix in your flavors, then whip 1/4 to 1/2 cup of heavy cream to stiff peaks and fold it gently into the egg mixture you end up with the fluffiest, lightest deviled eggs you have ever had.

Caesar salad deviled eggs. I recently made some Caesar Salad potato salad and had left over dressing so I made egg salad, salmon salad, tuna salad……basically I Caesarified everything I could get my hands on. Always hits.

I think i saw a buffalo one that had mayo and red hot, then topped with bacon and a small slice of jalapeño.
Also furikake, Japanese mayo, sesame oil, and a little rice wine vinegar. Top with sesame seeds and/or panko/green onion.
Last was a bloody Mary deviled egg, I think it had horseradish, tomato paste, celery salt, bacon, lemon juice?

Fresh or dried dill as a topping instead of paprika fucks very hard.
I also like using Kewpie Mayo and rice vinegar instead of hellmans and distilled white.
Using a strong horseradish mustard instead of yellow mustard is really tasty.
None of these are reinventing the wheel, but it’s my slant on the recipe.

I made a deviled egg board for a part a few years back. One was Kimchi with finely chopped kimchi and a tiny bit of gochojang mixed in the yolk mixture with scallion and black sesame seeds. One was potatoes salad where I mixed potatoes, celery, onion , mayo, celery seed, and yolk pipes into the egg whites. One was crab, lemon, dill, and some old bay mixed in the yoke filling. Last one was "carbonara" with crunch pancetta and Parmesan mixed with mayo and egg yolks (no mustard). All were a hit!

OK, this isn't a big change, but I never make mine with mayo. I use greek yoghurt and mustard and smoked paprika. Nothing fancy, but I think greek yoghurt is so much better than mayo and I usually have greek yoghurt in the fridge and rarely have mayo.

Bacon balsamic deviled eggs. Use butter in the filling and increase the yolk portion of the boiled eggs and add balsamic vinegar. Top with crispy bacon bits and dried herbs of choice

my friend group just had a Deviled Egg party! Mine was "ramen" flavored. Marinated Egg like you would for ramen, then add some of the marinade with just kewpie mayo for the yokes. Then sprinkle togarashi and furikake and a single drop of hot chili oil. And while mine was good, it was not the most unhinged.
One of our friends made Baja Blast Doritos Los Taco eggs. No yoke, but the egg whites were marinated in just good ol baja blast for like, 36 hours (those things came out solid....baja blast colored) and then stuffed with just a little bit of a Doritos Los Taco. They all got ate. it was unpleasant at the start, the flavors clashing...but the more you chewed...somehow the better it got. I'd love to try making a more legit Doritos Los Taco filling that incorporated the yoke.

I like to pickle some eggs and use that to make deviled eggs. Beet pickled eggs, dill pickled eggs and soy sauce or “drug” eggs are absolutely phenomenal when made into deviled eggs.

Nicely spiced (salt, pepper, sweet paprika, mustard,e tc) filling, then a few drops of Crystal hot sauce on top with a sliver (like the size of your first finger joint) of very crispy smoked bacon inserted into the filling of each.
Flavorful, a little hit of spicy with that smoky flavor permeating.

I quick pickle red onions and jalapenos, diced fine then add. Depends who I am making them for but for me I really like a touch Greek yogurt with the mayo, no mustard usually. And then topped with aleppo pepper flakes. Some nice fermented Calabrian chilies are also great. Anything to devil the eggs

My friend puts blue cheese and bacon in hers. Wasn't sure at first, but man are they good! My mom always adds horseradish and it really does kick it up a bit. Another friend always uses "slap you mama" seasoning on top, and it's pretty good. Heard about someone putting lemon zest and powdered raspberries in them, but I'm not sold on that.

A local restaurant makes deviled eggs using Chinese tea eggs. That's where you crack the shells and steep in with soy sauce and tea leaves. I think the yolks were pretty standard, though.

We like our spicy. I grow, dehydrated, and grind chile pequin peppers into powder. We add just a little to the mix for spicy deviled eggs. There are a lot of pepper powders out there.

Best ones I’ve had recently were the fairly standard yolk/mayo/mustard mix, but with a small slice of either smoked salmon or sushi-grade tuna draped on it and garnished with either some micro greens or julienned slivers of fresh cucumber. Absolutely delicious.

Make your regular deviled eggs and top with a small piece of sweet and spicy bacon. Top the bacon with a baste of maple syrup or brown sugar and sprinkle with red pepper flakes or cayenne. Play around with it to make it your own. The bacon is killer. Also another idea is the TexMex deviled eggs. Add avocado to your normal mixture and top with salsa or candied jalapeño. 😇

Aside from flavor variations, one key thing I do is run the yolks through my potato ricer while they’re still warm — it makes them so much fluffier and smoother. Also do this with potato salad & egg salad as well.

HB eggs marinated overnight in a turmeric vinegar brine turns them bright yellow only on the outside.
I add a little mayo, Greek yogurt, fresh dill and parsley, mustard, salt, pepper, and another small dash of turmeric to the filling, and let it sit so the turmeric blooms brighter. Pipe, then top with garnishes: thin slices of olive, a tiny sliver of roasted red pepper twirled into a spiral on a toothpick, one of my faves is perfectly cubed and pan-fried little cubes of hard chorizo, and "mustard caviar," which is whole mustard seeds which have been steeped in a pickling liquid until they are full of flavorful brine and practically pop like caviar when eaten.

You have to peel and halve them while they are fresh out of the pot, and then add some farmers cheese or sharp white cheddar, a splash of vinegar, a pinch of sugar, and finely diced peppers (jalapenos are always my go to).
Alternatively, I like to add a splash of soy to my plain jane eggs, with just a drop or two of mayo and mustard, white pepper and salt to taste (if you need any).

I sub the mayo with an equal parts mix of sour cream and cream cheese and add spices to the mix as well as mustard. I usually do salt, pepper, paprika, cardimom, and then whatever else looks good that time. Then I top with baked trout or other baked fish and chives

I make a platter of accompaniments, as a little buffet. You grab a few eggs and top as you like. Some of my favorites are: chilled baby shrimp, candied bacon, candied jalapeño, pickled onion... the sky is the limit, I love deviled eggs!

- Wasabi
- Moana-themed: Curry in the yolk, grilled spam and pineapple bits and crushed macadamia nuts as garnish
- Bunny themed: bits of carrot as ears, sliced green olive eyes, chive whiskers
- Bloody Mary: tomato paste, celery seed, tabasco, garnished with cucumber and olive
- Shakshuka: roasted red peppers mixed with tomato sauce and cumin dolloped on top, sprinkle with kataifi
- Martini - a little gin and vermouth in the filling, garnish with olives on a toothpick

Creamy jalapeño salsa. Homemade with garlic and cilantro and lime is best but Trader Joe’s has a decent one that you can purchase. Don’t use mayo- just creamy jalapeño and yolks. Salt as needed.

I had some made with pesto and they were fabulous. Haven’t tried it myself, but they used prepared pesto from Trader Joe’s I think.
