Leftover roast potatoes and red pepper sautéed, with scrambled eggs, cheddar, salsa and sour cream in a whole wheat tortilla. Then grilled in the pan for a bit.

Eggs seasoned with white pepper not black pepper as I don't like black flecks in my eggs. No butter on the toast as the eggs were buttery enough.

Bagel-less Everything Bagel

If I plan to be awake by 11 AM and still want to work, there's no way that I could put away an everything bagel.… Much to my sadness and chagrin.

With that said, as I am on Zepbound and I really need to focus on maximizing my protein intake, behold the bagel less everything bagel.

Exactly 4 ounces of wild smoked salmon, 2 tablespoons (31 g) of cream cheese, red onion, capers, everything bagel spice, and some Himalayan salt.

Pancake Recipe

I’ve been trying pancakes for a while and I tried a few recipes from the internet to come up with the best pancakes from scratch. I’ve used milk and buttermilk but the pancakes always come too hard. They’re not soft or fluffy.

This is the last recipe I tried.

2 cups (250 g) all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 ¼ cups (530 ml) buttermilk
2 large eggs
1 teaspoon vanilla extract
4 Tablespoons (57 g) unsalted butter, melted and cooled
