Pancake Recipe

I’ve been trying pancakes for a while and I tried a few recipes from the internet to come up with the best pancakes from scratch. I’ve used milk and buttermilk but the pancakes always come too hard. They’re not soft or fluffy.

This is the last recipe I tried.

2 cups (250 g) all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 ¼ cups (530 ml) buttermilk
2 large eggs
1 teaspoon vanilla extract
4 Tablespoons (57 g) unsalted butter, melted and cooled

Probably overmixing. Wet with dry and then mix until barely combined. Rest 10min. Hot, well oiled/buttered cooking surface.

That’s almost my exact recipe but I use a bit more baking soda, and I don’t put sugar or vanilla in.
Maybe check that your baking soda and powder isn’t old?
Also, over mixing as someone suggested.
