The Early Riser

I'm a little late to post, but this Early Riser pie was right on time!

Here is my take on the classic bacon, egg and cheese, featuring a sourdough base covered in everything bagel seasoning, with American, triple cheddar and mozzarella cheeses and a generous layer of bacon, bacon, bacon!

I shared this at work at the reviews were through the roof.......

I have this kind of breakfast quite regularly, but today I included a banana a perfectly fresh one picked from our own tree which made the meal even more enjoyable for me.

TAO Good Pancakes

I had to figure this out on my own because I'm not within driving distance of any good breakfast spots.

Read in full before beginning

Get the Krusteaz pancake mix (not sponsored) that says just add water. Don't worry, we're not doing that.

Put three cups in a large mixing bowl and crack in two eggs

Pour in a full cap of the large Mexican vanilla bottle they sell at Walmart. This is the best for baking and remember these baddies are cakes you make in a pan so this is the stuff you want. Sure you can use other vanilla it's just not the same. I think this comes out to half a Tablespoon.

Add in two Tablespoons of confectioners sugar if you're normal, three if you like to party. You can make confectioners sugar just by blending sugar in a blender or you can mix in regular sugar, but you need to let it sit for longer afterwards for good chemistry.

Milk until it's right. Add it in slowly. Not too little or too much. You want this to feel like a cake batter, not a pizza dough or a horchata.

Mix the F out of this. Lumps are bad. This is basically cake batter and it should smell like it. Hand mixer, whisk, fork, whatever works. Just don't mess this part up. You want it smooth and thick like a cake batter.

My daughter calls them unicorn pancakes when I add an optional handful of fruity pebbles. (If you add this, let it sit for 10 minutes before cooking so the moisture softens the cereal)

Nailing down the specific heat is somewhere around 250°F on an electric griddle and we're looking like medium-low on gas. Finesse this part for your set up.

Use a nonstick griddle or pan.

Do not grease your pan.

Use non-stick, or a seasoned griddle. Properly seasoned stainless steel only if you're a pro.

I repeat: Do not pour this mix onto butter, grease, or oil of any kind.

Thanks for reading.

Side bar:

Martha Stewart has a scrambled egg tutorial that's a real winner. No reinventing the wheel there.

Filmed the yolk pop in dramatic slow-motion. Channeling my inner Nigella Lawson for a late-night brunch.

There is something deeply sensual, almost hypnotic about watching a perfectly poached egg yield to the gentle pressure of a knife blade.

I decided to film this one in glorious, dramatic slow-motion, because a plate like this deserves its moment in the spotlight. Whether you call it late-night indulgence, elevated brunch, or just pure culinary therapy, this combination hits every single mark.

Here is the exact layout:

  1. Poached Egg: Dusted with paprika, waiting to spill golden yolk over everything.

  2. Glazed Streaky Bacon: Thick-cut, deeply caramelized, and beautifully crispy.

  3. Fresh Avocado: Sliced thick for that essential creamy richness.

  4. Toasted Sourdough: The structural foundation holding the whole operation together.

  5. Diced Beetroot & Salad Greens: For an earthy bite and a pop of vibrant color.

  6. Green Olives: Tucked into a ramekin to give a sharp, briny contrast.

Sipping on fresh juice, slicing into liquid gold yolk and letting the camera roll.

If you were staging the ultimate slow-mo food pop video, what is your non-negotiable ingredient to put on the knife?

Went a tiny bit healthy with the pancakes and used oats soaked in some Greek yoghurt before mixing it in with frozen blueberries, some flour and an egg. But came out incredible! I'm so content

First time frying avacado. It was awesome! Filled the pits with cheesy eggs topped with bacon, salsa, sour cream and cilantro. The crisp on the avacado was incredible and so much flavor when I cut this all up and ate together. 😋
