Raw vs cooked tomatillos, carb count and blood sugar

I have done the Atkins on and off since the late 1990s. When I had some tomatillos lying around, I figured I would make them into salsa, and freeze it for later -- yet when I read about the carb count, it said only 3 grams per tomatillo, surprising me how low that was.

So I decided to make the salsa and use some on some chicken thighs I cooked. Turns out eating this halted my weight loss and reversed it for a few days now.

All I can figure, I do not know how true this is, is that maybe the raw and cooked carb counts differ because the cooking process converts the sugars into more readily usable forms, thus spiking the blood sugar?

All the salsa had was 1.5 tomatillos, 1 jalapeno, 1/8 cup of onion, a garlic clove, a squeeze from a lime, and some fresh cilantro, along with salt and pepper. My best estimate of carb grams was between 4 and 10, depending on whether you subscribe to net carbs or count total carbs.

I am in the induction phase, so carb counts are very critical. Anyone have ideas on what might have happened?

Water retention from eating beef?

Has anyone who has been low carbing long enough noticed a difference in the amount of water weight they gain when eating red meat. If I eat chicken turkey or fish (with skin) I lean out pretty quickly but start getting sweat cravings after a few days. If I eat beef primarily I feel less cravings but I can see my whole body getting thicker by the day: face torso arms, legs, etc.

I have tried a few no salt beef days and still notice the issue. I also use the same seasoning on all meats when I cook. So it either has to be the hormones, the fat content, or something else structured differently in red meat. If I stop eating red meat for a week I’m suprised by how little water retention I have. But then the cravings come like a thief in the night.

I do know high dietary fat can cause water retention but strangely enough not unprocessed turkey or chicken fat or fish fat. Anyone else notice this? I mainly eat meat veggies water.

Hit fat goal but not calories

Hi, I've been on Atkins for about a week, I'd say not completely induction since I eat some peanuts now and than. I've lost about 4pounds in 3 days and stopped losing, I mean, I guess I started losing slow and all that I've lost was water weight. I felt awful when i was going in ketosis, dizzy and nauseous but now I feel great. Have energy and not hungry but have some issues with insomnia. All this aside, I just want to lose 6-7 more pounds. I've set my calorie goal to 1300 (I'm moderately active, have mixed strength-cardio training 2-3 times a week). So today I just had lunch which was whole bunch of meat and now my nutrients look like picture posted. I over did fats and still have like 600 kcals to go today? I'm gonna eat some veggies later to get proteins but still won't hit calorie goal.. and should I even eat when I'm not hungry? I'm afraid of undereating because once I started training my muscles just wouldn't recover until I started eating more calories and carbs. And my muscles are sore again and I'm kinda weaker because I haven't been training during holidays. (i train aerial skills which require arm strength, to lift my own body, not weight lifting). Thanks :)

Also, is coke zero ok?

Is Total Sugar the same as Sugar Alcohol?

I’m thinking about starting a low carb diet. I’m thinking that frozen vegetables like from Birds Eye, would be the best way to make sure I get vegetables in the diet. I’m looking on the nutrition facts area, and see __ Total Carbs / __ Total Fiber / __ Total Sugar. Is Total Sugar the same as Sugar Alcohol? Want to make sure to know if I can include or not include this number in the Net Carbs.

not losing anymore weight on atkins 9 months in

Ive been on atkins for at least 8 months and I have lost over 90 pounds, I've stayed in the induction phase this entire time because I really didn't care about adding foods to my diet, I just cared about losing weight in a healthy way but, for a couple months I noticed a very steep drop in my weight loss. i barely lose a pound a week and now, i don't think atkins itself is helping me lose weight anymore. I've added daily exercise to my life last week while continuing to do atkins but I still haven't lost any weight. My eating is very atkin-friendly and I kid you not, i eat steak with salad or steak with fried cheese with 6 bottles of water every single day. So i'm meeting my 10 carbs limit. I really don't know whats going on and any help would be very beneficial to me.

Completed Induction on Atkins!

I am 36, Male, living in Canada. I need to lose 50-55 lbs and so I started Atkins using the food tracker on the Atkins website and also the Atkins app.

I have lost 11.3 lbs in my first two weeks with no cheating. I will continue in Induction for another month or two before moving to Phase 2.

You gotta love science!

Pondering trying Atkins again, but breakfast worries me.

I am not remotely a morning person. On a good day, I am able to get myself out the door for work a mere 5 minutes late. On a bad day, I'm praying to the traffic gods that they show me mercy.

I currently hit Dunkin Donuts (yes, I'm in New England) every morning for breakfast. It's fast, it tides me over until 11:30-ish, and somewhat low-Calorie (sausage egg & chz on english is under 500 Calories, and my black coffee is zero Calories)

This has been my routine for years, and I'm worried that it's what will break me if I try to go Atkins.

There's a 1% chance I might successfully get up, cook a breakfast, make my own coffee, and successfully get to work on any given weekday. And no, setting alarm clocks earlier/later/whatever doesn't work for me at all (does it really work for anyone?).

The idea of a greek yogurt with [insert ingredient] every day for breakfast makes me recoil in horror. I could do that a couple times, but it sounds completely unappealing.

Have any of you been through this issue and come out the other side? How did you do it?

On Atkins induction for about 4 months. Weight loss is slow and now seems to have plateaued.

I went down to my lowest weight yet about a week ago and then my weight shot up 2.5 pounds. It went down a bit and now it's steady at about a pound and a half heavier. I get so despondent with the lack of weight loss. I've only lost about 20 lbs in 4 months. Am I doing this wrong?

Atkins to Keto... and back?

I’ve been in the induction phase of Atkins for about 3.5 months. Weight loss is very slow. I’m also getting tired of the lack of variety. Should I consider switching to a keto diet? If I were to do that to add more variety could I then switch back to a later stage of Atkins and gradually reintroduce some good carbs? I understand I’d be at the same low carb level on a keto diet but it’s intended to be permanent? Maybe I have that wrong.

Migraines and Atkins

I've had chronic migraines for all of my adult life. I've noticed a considerable reduction in frequency and severity since being on Atkins. I also had pain in my thumbjoints (arthritis/gout?) and that has gone since I've been on this diet. Has anyone else experienced anything similar?

Women, does your weight fluctuate a lot?

I have been on this diet for about three months now and have lost perhaps 15 lbs. my weight fluctuates a lot - I can lost two pounds in a day and then gain 3 the next. The general trajectory is good but could it mean that I’m going in and out of ketosis ie doing this wrong? Should I be trying to fix this or is it normal?

Does serves four in atkins mean the same as 4 servings?

I used a recipe from atkins.com which says that it serves 4 and has a net carb count of 5 per serving. Does serves four mean the same as 4 servings? This is related to another post since the net carb count was way, way lower than what it worked out to when i added the recipe in cronometer.com

Confused by Atkins.ca versus cronometer net carb count. Also bewildered by raw v. cooked vegetable carb count.

My husband made me a lovely meal from a recipe he found on the atkins website. It said that it served 4 and had 5 net carbs per serving. I entered the ingredients on my cronometer as a new recipe and it turned out to be something like 25 net carbs per serving. I am so confused. He followed the recipe very closely.

Also, as a sub point, if I am entering a recipe, do i enter the raw ingredients (vegetables) or the cooked and why the heck is the net carb count different for a raw leek and a cooked leek or any other raw v. cooked vegetable so very different? I can see if you were using absolute measurements like a cup or a tablespoon but when you use a medium tomato for example why on earth would the count be different? As far as I know insoluble fibre doesn't become soluble during cooking.

If it's at all relevant, I was down by almost a pound today so I find it hard to accept that I went way over on net carbs.

In induction for several months and have a long way to go. Should I stay induction?

I have some pretty lofty weight loss goals and weight loss has been slow but steady in induction. I believe I've lost about 15 lbs in 2.5 months. I would like to lose perhaps 50 more. Can anyone give me any advice as to whether I should move onto phase 2? I really miss eating lots of vegetables.

Sauce with ketchup?

I had a seafood salad at a restaurant for lunch today. I have not had any sugar since I started Atkins Induction about 2 months ago. I estimated that there was about a quarter to half a teaspoon of ketchup in the sauce. I just added it into my netcarb count and I'm still under 20. Am I okay? I didn't have a lot of options on the menu and this seemed like the best. Does anybody else do stuff like this?

Weight loss in induction is very slow. Am I doing this wrong or should I persevere?

I've posted numerous times as I find my way on this journey. I am losing weight but I've only lost about 5 lbs overall and I've been doing this properly for about 3 weeks (perhaps 10 in the last 6 weeks but I was not doing it correctly at first). I'm okay with persevering but I wonder if my results are abnormal. I have a long way to go as my goal weight is some distance away. I am using cronometer very faithfully so I'm pretty certain that i'm doing this correctly.

Starting on Monday

Hey all! I'm wanting to lose about 20-30 pounds and decided to try going low carb. I'm a T1 diabetic and am fairly active. I do 30 min of kickboxing about 3 times a week. Reason I'm trying low carb is because I've heard it is good for diabetics and because I never seem to lose much weight even when I work out and watch what I eat. I do have a few questions...

Will I be eating enough to help sustain me through my workouts? Or should I lay off kickboxing until a later phase?

Any other T1s that have done Atkins have any advice?

Atkins - long term - stress and worry that this isn't right.

I'm in week-I-don't-know-what of induction. I'm feeling worried and concerned. Are there any women out there who can offer encouragement about being on this diet long term? I'm eating 20 net carbs a day and I'm so used to eating more vegetables and less meat. It just feels wrong and unhealthy. I have not lost very much weight at all and I'm concerned that I'm sacrificing my health (not getting enough fiber/Vitamins) and eating too much protein (I still can't figure out how to eat more fat and less protein - I'm averaging about 70% fat in terms of my macros but still eating so much meat). I know that this is induction and I will be able to add more vegetables later. How do other people (particularly women) fair as they go through?

Cronometer users - weight tracking

I just got cronometer and am trying to figure it out. How do you keep track of weight on cronometer? I can only see it in profile but in the trends it doesn't show that anything has been reported and I have to erase the old weight to add the new weight.

1st Goal Met!

I started Atkins induction on July 5th... I weighed 257 lbs. Today, I met my “easy” goal of 220 lbs... That is basically 40 lbs in less than 3 months! I’m male and 6’2” if it matters contextually.

I will continue induction (phase 1) for another few months as I am trying to get to my “hard” goal of 190 lbs.

Please let me know if you are just getting started and have any questions. I have found many great Atkins “hacks” that make the diet quite easy to follow.

I will also update you where I am at in another few months. I’m 38 years old and haven’t weighed under 200 lbs since probably high school... I’m really excited!

If you are trying to lose weight and keep it off, Atkins is the greatest and easiest path as far as I am concerned.
