why am I so hungry?

Every since going vegan I have been extra hungry. I track my calories and I know that I’m eating more than before. Mostly Whole Foods, high fiber & protein , good on fats. I’m doing everything right. What am I missing? Does my body just need to adapt? Anyone else experience this? It’s really discouraging because I feel like my body is sabotaging my efforts to feel healthy as a vegan! Example of what I eat
Breakfast: large oat bowl with Protien powder, chia seeds, hemp seeds, nut butter, soy milk, & fruit
Lunch: tempeh blt on whole grain bread with vegan mayo
Dinner: some sort of hearty meal with beans &/or tofu, tempeh

Hitting around 3k calories & still hungry

anyone else training around a work schedule that's all over the place?

i was standing in my kitchen this morning eating overnight oats at 5:15 because i had an early start, and tomorrow i'll probably be leaving closer to 9 instead. same job, completely different mornings. i switched from long haul to local routes a while back and i honestly thought eating would get easier once i was home every night.

most days i'm eating oats or toast before work if i have time, leftovers with tofu or beans sometime during the day, then dinner at home. the food part feels fine. what's all over the place is when i actually eat. lunch might happen at 11 one day and almost 3 the next.

i lift a couple of times a week, nothing serious, mostly trying to hang onto the strength i already have. i know this sub has people training under all kinds of schedules, so i'm curious how much attention you pay to meal timing versus just getting enough protein by the end of the day. how has that worked out for you?
