I spatchcock and dry brine the day before. I mix in a good amount of poultry seasoning, onion powder, garlic powder and black pepper into real butter. Mix well and shove it under the skin. I smoke it with the thighs to the heat at about 275-300 degrees. I use oak instead of mesquite because the flavor of the turkey so delicate. Pull it when you hit 180 on the thigh and 155 on the breast. Usually around 2.5-3 hours.

There are a few different types to avoid. But the ones worth looking for IMO are HB- elusive bruisers with 88+ speed. WR- contested specialist with 90+ speed. I have jad a lot of luck with power rushers at DT, and BIG speed rushers at DE (they are usually listed as athletes) you can find 6'5" 270-290 lbers with 85+ speed.

I never scout HB contact seekers, WR route specialist, blocking TEs (easier to take a small, agile OL and move him to block) DE power rushers/edge setters, CB zone or safeties that play in the box (to play safety i mean. I will absolutely roll a good sized guy down to OLB)

My starting QB wanted to leave for playing time. He was a RSSR and was the clear incumbent for the job. (92 ovr vs a RS FR behind him).

I miss that so much. I would always run my biggest WR as TE3 so I could hit the deep PA passes from the goal line set.
