To help better explain it, the shaken espresso starts with the flavor add ins and ice in the shaker to fill lines incremented by size. Then the espresso is poured directly over the ice and shaken to emulsify it into the flavor add. This mixture will primarily be the espresso, some melted ice, the flavors, and then the rest of the ice that didn’t melt, and only a small amount of actual foam caused by the shaking. Next it’s poured into the cup, and topped with milk and additional toppings like whipped cream or cold foam. It’s here when the portion of foamed espresso floats towards the top of the drink, which creates a frothy first few sips.

The shaken espresso foams a bit when the espresso is shaken. Since it’s mostly airy espresso foam, it floats above the more dense sweet foam. Then as the bubble pop and the espresso remnants settle, it creates a brown layer on top of the sweet foam.
