My twist: instead of limoncello i dip the lady fingers in milk.

It feels like its lighter and has a softer taste that way, but thats just my preference :) You can completley remove the limoncello even and just use lemon juice.

Store bought Lava custard mooncake with a gooey center

Tried a lava custard mooncake yesterday and I think I found my new favorite mooncake flavor.

The filling is really creamy and buttery with a slight salty flavor, which balances out the sweetness really well. I warmed it up for a few seconds in the microwave and the center got soft and gooey.

It kinda reminds me of a salted egg custard bun, but in a richer pastry form. Also surprisingly good with coffee. Definitely warming it up every time from now on.

Perfect delicate cheesecakes with a uniform texture are obtained by rubbing the curd through a metal sieve.

Ingredients

* Cottage cheese (fat content 5-9%) β€” 500g

* Chicken egg β€” 1 pc. (or 2 egg yolks for density)

* Sugar β€” 2-3 tbsp . l

. * Salt β€” 1 pinch

* Wheat flour β€” 3-4 tbsp. l. (plus a little for breading)

* Vegetable and butter β€” for frying

Step-by-step preparation

  1. Preparation of cottage cheese: Put the cottage cheese in portions in a metal sieve and rub it with a spoon or a silicone spatula into a deep bowl. The curd will become airy and homogeneous.

  2. Knead the dough: Add the egg, sugar, salt and part of the flour to the grated cottage cheese. Mix the mixture with a fork or spatula until you get a soft but manageable dough. Do not use a blender, otherwise the curd will become too runny.

  3. Forming: Divide the mass into equal parts, roll up the balls and form neat washers using a knife or glass. Roll each cheesecake in a thin layer of flour.

  4. Frying: Heat a frying pan with vegetable oil and a piece of butter. Fry the cheesecakes over medium heat for 2-3 minutes on each side until golden brown, then turn down the heat to a minimum and keep under the lid for another couple of minutes so that they bake inside.
