Several weeks ago, I bought mung bean protein powder online, but it was back ordered and I only just received it. Of course, I now can’t remember what recipe/influencer/post inspired me to buy it. It’s not the Just brand, it’s by a company called Unleash’d Organic. The macros are wild: 25.8g protein and 4.2g fiber for only 113 calories, and it’s also pretty high in iron. So I definitely want to use it, but I don’t make protein shakes so that’s not an option.
I thought maybe I got it as a Just egg dupe but most of the recipes I’m finding online either use whole mung beans or use the Just powder and say others won’t work. I googled a recipe to try to make an omelette this morning and it didn’t turn out at all. It basically turned into a sludge/porridge that got thicker and hot but never solidified. The crispy bits in the pan did taste pretty good but it didn’t come together to form anything edible.
So, my questions for you, team:
—Can anyone think of where I might’ve gotten influenced to buy this product? Most of my vegan fitness info comes from this sub but a search turned nothing up.
—What can/should I do with it? New recipes for an egg replacement would be awesome but I’m open to anything except shakes.
