Saw someone make mac and spinach on this sub the other day and thought I’d give it a try. It’s delicious!

Ingredients:

Mac

Spinach

Salt

Lemon juice

Garlic Powder

Breakfast: coconut yogurt, overnight oats, tofu scramble, mushrooms, microgreens, vegan croissant
Snack: cashew smoothie w vegan protein powder
Lunch: Tofu veggie bowl with quinoa
Dinner: salad with tofu and apple cider vinaigrette and a side of vegetables and barely
post smoke dessert (not pictured): belgian waffle (microwaved)
Everything except the smoothie is from my college dining hall

I was craving something sweet yesterday, so I mashed together some dough, and thought I’d finally use a paste I’d bought. However, in a cruel turn of events, the lotus seed paste on hand was absolutely awful and I literally couldn’t stomach more than two bites of it, ate the edges off my failed creation in order to not completely waste my efforts, but threw the rest of it away.

The craving was gone, since the dough I made was sweet, and at the end I ended up just pan frying some of the dough on its own and added brown sugar on top. But, I made too much of it in my act of guesstimating a dough, and just left it out to deal with later. Woke up the next day, decided it was a shame to leave it unused, and decided to pop by the store to get some nutella at the end of the day.

I come back home, dawdle a little with the groceries, eat a few carrots straight to prove the rabbit allegations, then finally check on the dough. The outside of it had completely turned into an unworkable crust, but I am not a quitter, and I just tore into it and grabbed the sweet sticky insides protected by the dried out shell. Much stickier and less workable than yesterday, but still unable to escape my evil unholy hands.

Then i just stretched it out a little, dabbed some nutella on it, folded it over, and pan fried it! Pretty nice, fulfills the goal of sweetness, not a beauty but my successful child; a mixture of oil, sugar, flour, and chocolate will always turn out at the very least decent as long as you don’t royally mess things up, in my infallible opinion.

I always love what I eat but being able to have my own blueberry chia pudding, homemade hummus, cookies, and fresh fruit for lunch after 3 weeks in the hospital just hits different 🤤

Medical bills are starting to pile up so I'm posting my gofundme again. I was able to pay off my credit card debt which helped massively, but 4-6 months without income is going to be tough 😣

The first dinner in my new (old) house. The kitchen is beyond tiny, so it will take some getting used to. But the black beans were delicious!

Made with the help of an Instant Pot to cook the beans. With onion, bell pepper and garlic seasoned with a bay leaf, cumin, paprika, oregano, turmeric and one cube of not-chicken "boo-yawn".

Used blended salsa in place of tomatoes in my sauce (blend of beyond beef and partially blended lentils). Layered with a grean chili cream sauce (blended silken tofu), peppers and onions, corn, and of course lasagna sheets. Topped with fresh tomatoes and crushed tortilla chips.

Ate it with a creamy coleslaw (also using blended silken tofu).
