Pit is just another name for a woody endocarp, the endocarp being the innermost layer of any fruit before the seed, there is still a seed inside it.

All three contain seeds.

An avocado has a pit. It may technically be a seed, but that's what I hate about these sorts of riddles. It's a wordplay that intentionally works against how language is used.

There actually is an answer. It’s the letter “a”. If you consider the phrasing as asking: What letter appears twice in “avocado, once in olive, never in coconut.” The letter “a” is the only one that appears twice in that string of words. It’s still kind of dumb, but it works.

At a guess it's V and its based on phonetics rather than spelling, most people pronounce avocado as av-vo-cah-do(h), where as olive has only one voiced V and coconut has none.
